This month Matt is bringing some zest to One Ingredient. Lol. I am a big fan of lemon myself, so this one particularly excites me, as I can just imagine how it can be brought to life. If you (still) haven’t been to one of Chef Matt’s dinners, it’s 5 courses of amazing. You watch him demo the making of, and then try your hand at cooking it yourself. The Lemon Dinner costs R650 per person. There are only 20 seats per sitting and they’re sold on a first come, first served basis. Saffron risotto balls with lemon aioli

Mackerel fillet poached in lemon olive oil, pickled cucumber, fennel and lemon yoghurt, lemon marmalade and horseradish parfait

Karoo lamb, chargrilled baby gem hearts, cumin and aubergine puree, lamb crackling, lemon and black olive crushed Nicola potatoes and spring greens
