Avo Waffles with Savoury Mince
Makes 6
Preparation time: 20 minutes
Cooking time: 1 hour
Ingredients:
FOR THE SAVOURY MINCE
- Avocado or olive oil for cooking
- 1 onion, chopped
- 2 garlic cloves, crushed
- 500 g beef mince
- Salt and pepper
- 30 ml (2 tbsp) cake flour
- 50 g packet tomato paste
- 500 ml (2 cups) beef stock
- 15 ml (1 tbsp) soy sauce
- Handful parsley, chopped + extra for garnish
FOR THE WAFFLES
- 30 ml (2 tbsp) sugar
- 2 avocados, sliced
- 250 ml (1 cup) milk
- 2 eggs
- 375 ml (1½ cups) cake flour
- 5 ml (½ tbsp) baking powder
Method:
- For the savoury mince, heat a splash of oil in large frying pan on medium high and sauté the onion for 5 minutes. Add the garlic and cook for 1 minute. Keep aside.
- Heat another splash of oil in the same pan and fry the mince for about 8 minutes or until browned. Season with salt and pepper.
- Return the onion together with the flour and tomato paste. Add stock and soy sauce. Season with salt and pepper. Reduce heat to low, cover with a lid, and simmer for 20 minutes. Stir through parsley
- For the waffles, blitz together the sugar, 125 ml (½ cup) of the avocado, milk, 2.5 ml (½ tsp) salt and eggs until smooth.
- Sift over the flour and baking powder and mix until just combined.
- Heat a waffle maker. Grease with cooking spray and add 80 ml (⅓ cup) of waffle batter (spread with a spoon if you like perfectly shaped waffles), close and cook for about 3 minutes or until cooked. Repeat with the rest.
- Serve the waffles with the mince, remaining avocado and extra parsley.
