Chocolate Fudge Cake Recipe

It was World Baking Day on Sunday and as part of the preparations Stork & Gorilla Creative Media sent us a baking kit to ensure that we were ready for the big day. The instructions were simple: Bake a cake, put it somewhere crazy and snap a picture of it. To see all the crazy cakes that have been created go to the ILoveBakingSA Facebook Page.

Cakes can be seen posing next to cars, pool tables and even at petrol stations. Others were seen surfing the waves and enjoying the stunning view from Table Mountain. Sadly, the cakes only had a short moment to enjoy their strange surroundings, as  they were eaten by hungry bakers shortly afterwards. To follow the action on Twitter just search for #caking.

Chocolate Fudge Cake

Preparation time: 20 minutes
Cooking Time: 30 minutes
Servings: 12

Cake

  • 175g Margarine
  • 175g castor sugar
  • 175g self-raising flour, sieved together with 1 teaspoon of baking powder
  • 3 eggs
  • 3 level tablespoons of cocoa, blended with 3 tablespoons of hot water and cooled
  • 55g white chocolate chips

Fudge Icing

  • 55g Margarine
  • 2-4 dessertspoons milk
  • 200g icing sugar, sieved
  • 2 tablespoons cocoa powder
  • Decorations to finish

Instructions

  1. To make cake, place all the cake ingredients apart from the chocolate chips in a mixing bowl and beat with a wooden spoon until well mixed.
  2. Place the mixture in two 20cm cake tins, previously bottom lined with greaseproof paper and bruished with oil. Sprinkle with chocolate chips.
  3. Bake on the middle shelf of a preheated oven 180C for 25 – 30 minutes
  4. Turn out and cool on a wire tray.
  5. Place all Icing ingredients together in a bowl and beat together until smooth.
  6. Sandwich cakes together with some of the icing and spread remaining icing of the cake with a palette knife.
  7. Decorate with your choice of chocolate decorations.

P.P.S.: By the time I realised that I’ve completely missed out on Step No.2, it was dark & raining outside. It’s not a strong excuse but I will make more of an effort next year.
