It’s a beautifully tender, delicious cut that offers more complexity than it’s more celebrated counterparts. It’s made up of different muscles (as opposed to just one) and it benefits from an extra stint in Frankie Fenner dry-aging process.

The fresh Yellowfin Tuna are caught individually using a pole, this ensures that the Tuna is not damaged and is the most sustainable method of tuna fishing. They are caught locally off the coast of Cape Town. The icy cold waters ensure that the Tuna are lean and firm – boasting an amazing texture when eating.

The fish are placed on ice in the boat immediately after being caught. This ensures the Tuna is kept fresh right up until they are processed, packaged and delivered to your door.
