Grub & Vine has recently announced the appointment of Aaron Subroyal as Head Chef, a significant milestone in a career that began at 1000 Hills Chef School in KwaZulu-Natal.
- Born and raised in Durban, Subroyal discovered his passion for food through family influences, with both his father and grandmother working as chefs. After completing his culinary training at 1000 Hills Chef School, he embarked on an international career path that would take him through some of the world’s most acclaimed kitchens.
His first major role was at the Michelin-starred Restaurant Michael Mina in San Francisco, where he honed the discipline, precision, and technical skills demanded at the highest level of professional cooking.
From there, he continued building an impressive résumé that included time at Cape Town’s renowned Test Kitchen under Luke Dale-Roberts, The Atlantic Hotel in Jersey under acclaimed British chef Will Holland, and the iconic Sketch in London, where he worked under the influence of legendary French chef Pierre Gagnaire.
Today, Subroyal takes the culinary reins at Grub & Vine, a restaurant widely recognised for its refined yet approachable approach to contemporary dining. His appointment reflects not only his own dedication and talent but also the strong foundation established during his training years.
