The wines featured are the pride of Springfield Estate, a family-owned winery in the Robertson Valley, which has earned acclaim for its philosophy of minimal intervention and terroir-driven winemaking. Each bottle reflects dedication to purity and balance – from the minerality of Life from Stone to the elegant structure of The Work of Time.
Set for a sublime winter’s afternoon, guests will be welcomed with a glass of Life from Stone Sauvignon Blanc 2025 by the owner of Springfield, Jeanette Bruwer.
- The wine is renowned for its racy minerality, offering the perfect introduction to an exclusive menu of meticulously curated small plates and wine pairings. Each course is crafted by Head Chef Oelof Vorster, whose refined touch brings out the best of local produce and bold global influences.
The menu begins with Citrus-cured sea bass accompanied by grapefruit and lime segments, paired with the vibrant Springfield Estate Miss Lucy, a unique blend bursting with freshness, showcasing stone fruit and lime with a crisp, saline finish that mirrors its maritime origins. The second small plate, a delicate Chawanmushi with shiitake consommé draws depth and umami to match the complexity of Springfield Estate Wild Yeast Chardonnay 2023, known for its wild fermentation and layered palate of butterscotch, citrus zest, and integrated oak.
For the main course, Pepper-crusted beef fillet is elegantly complemented by Springfield Estate Whole Berry Cabernet Sauvignon 2022, a juicy and expressive red with soft tannins, and velvety mouthfeel from whole berry fermentation. A decadent finale awaits with a Dark chocolate torte, paired with the rich and layered Springfield Estate The Work of Time 2019, a barrel-aged Bordeaux-style blend with a long, elegant finish that lives up to its name.
Overlooking the famed cliff path and the vast Atlantic beyond, The Marine’s Pavilion Restaurant offers the perfect setting to enjoy this gourmet experience. Floor-to-ceiling windows frame uninterrupted ocean views, adding a magical backdrop to a menu designed to spark conversation and showcase the best of South African hospitality. With whale season in full swing, guests may even glimpse southern right whales breaching just offshore.
