Set on the historic Hazendal Wine Estate in the Stellenbosch Winelands, Siyalima’s Restaurant Week experience starts with a glass of Hazendal Blanc de Blanc Cap Classique on arrival, followed by canapés and three courses. The restaurant’s ingredient-led approach places seasonality, provenance and the land at the centre of the menu, with ingredients harvested from the estate gardens wherever possible.
The canapés begin with Mushroom Parfait, served with toasted brioche, marinated shiitake and pickled shimeji, alongside a vegetarian Caprese Tartlet featuring fynbos-marinated tomato, bocconcini and basil.
The starter is French Gnocchi, a vegetarian dish pairing garden peas and steamed asparagus with crispy onion and a wild garlic and leek velouté.
For the main course, Roasted Lamb Saddle is served with baby marrow and parsley purée, parsnip pavé, spinach, and apricot and wood sorrel lamb jus. The dish is gluten-free.
Dessert brings a delicate finish with Vanilla Custard, served with hibiscus-poached pear, strawberry and salted almond. The dessert is vegetarian and contains nuts.
Siyalima, whose name means “we are farming” in Zulu, is Hazendal’s flagship restaurant. Its philosophy is closely connected to the estate’s Harvest Garden, with fresh, organic and seasonal ingredients forming the foundation of its cuisine.
The restaurant’s menu is designed by Culinary Director Chef Phil Carmichael, with an emphasis on precise cooking that highlights the natural flavours, scents and textures of organic ingredients. Its wine offering includes Hazendal Estate wines, alongside selected local and international wines.
