Wine & Dine Evening at Twelve Apostles with Shannon Vineyards

The Twelve Apostles Hotel and Spa will be hosting a special four-course, fine dining food and wine pairing dinner at Azure Restaurant on Friday 25 September 2015, in association with Shannon Vineyards & Wines. The evening will be co-hosted by Azure Executive Chef Christo Pretorious and winemaker James Downes.

Shannon Vineyards & Wines is located in the Elgin Valley within the Kogelberg Biosphere. A member of the Biodiversity Wine Initiative, the wine farm creates vintages of complexity and elegance and focuses on viticulture principles in order to reflect its commitment to winemaking as an expression of terroir. Wines are produced from 12 different site specific vineyard blocks of Pinot Noir, seven blocks of Sauvignon Blanc and a half hectare of Semillon, as well as a ‘work in progress’ Viognier.

Azure provides the ideal location to showcase Shannon Vineyard’s wines. Poised high above the Atlantic Ocean on one of the world’s most scenic routes, the restaurant offers breathtaking sea views and contemporary elegance. Guests can expect innovative fine dining at the award-winning restaurant, which has just secured its place on the prestigious American Express® Platinum Fine Dining Awards list for the fourth year running – as one of only 18 restaurants in Cape Town to have been honoured in the prestigious 2016 listing.

On the evening, Chef Christo will first serve Yellowfin Tuna with tartare, compressed daikon, soy emulsion, dashi jelly and puffed wild rice, accompanied by the Shannon Vineyards Sauvignon Blanc 2009. The flavours of the second course, Barn Raised Quail – smoked quail consommé, couscous pearls, malay spiced cauliflower, and pickled mushrooms, will be further enhanced by the Shannon Vineyards Rockview Ridge Pinot Noir 2013. The main course – Confit Lamb Loin with buttermilk curd, creamed artichoke, spring vegetables, black olive, and seed crumble, will be perfectly matched with the Shannon Vineyards Mount Bullet Merlot 2012.

As a sweet finish, guests will be treated to Popcorn Parfait with strawberry cremeux, strawberry sponge, salted caramel popcorn, and pistachio sabayon, together with glass or two of the Shannon Vineyards Macushla 2012. Diners may further indulge in a selection of Petit Fours with their tea or coffee.
