The Table Bay Hotel: New Food & Beverage manager for five-star V&A Waterfront Hotel

GOING GLOBAL TO BRING THE BEST TALENT TO THE TABLE BAY

After working at hotels around the world for the past 15 years, Food and Beverage Manager Nathan Fielding has brought his global experience to the Mother City’s best address, The Table Bay hotel.

From running F&B at an almost 700-bedroom hotel in London’s Marble Arch, to being hotel manager in the Scottish Highlands, and more recently soaking up the Spanish sun while doing pre-opening operations at a five-star hotel on Ibiza, Fielding has brought his diverse experience back to his hometown. Working for an Indian hospitality group, he also travelled to India and learnt about their culture and systems.

  • “I have been wanting to come back to South Africa and be around family and friends for some time,” said the 39 year old who studied International Hotel Management at Varsity College.
  • “I arrived in December and took a good, long holiday to recover from doing two hotel pre-openings, back-to-back in Spain, and then spotted The Table Bay opportunity.”

The Sun International hotel appeals to Fielding, who said he liked “the classic nature of the hotel, the location, the five-star offering with afternoon tea. It’s about luxury and personalisation”.

In his new role which commenced on March 1, Fielding leads a large team responsible for in-room dining, all-day dining, afternoon tea, conferencing and events as well as the kitchens. “I am settling in and seeing what I can do to improve systems, service and guide the team.”

One perk of being back home is being able to enjoy South African wines, which Fielding rates as “the best in the world”. “The Table Bay has recently updated our wine list to include some well-loved favourites and some unusual and rare wines, and it really fits with our purpose to give our guests memorable experiences.”

In his leisure time, Fielding can be found boxing at the gym, enjoying the natural beauty of Cape Town or discovering the wonders of small towns in the Cape.

“Nathan’s international experience is an excellent fit with our diverse mix of guests who visit us from all around the world, and we look forward to going from strength to strength under his leadership in our F&B department,” said The Table Bay General Manager, Joanne Selby.
