Basil Cayenne Stuffed Lamb Recipe

Ingredients

  • 2.5kg lamb shoulder, deboned and butterflied
  • 2 tbsp coarse salt
  • 4 tbsp Dijon mustard
  • 1 tbsp garlic, crushed
  • 2 tbsp canola oil
  • 2 tbsp rosemary, chopped
  • 100g prosciutto

For the stuffing

  • 2 tbsp Black Mamba Cayenne Pesto
  • 2 tbsp olive oil
  • 1 diced onion
  • 2 cloves of garlic, crushed
  • 250g procini mushrooms, sliced
  • 300g baby spinach, rinsed

Method

  1. Preheat oven to 160 degrees celcius and grease a roasting pan with oil.
  2. Rub meat with coarse salt.
  3. Mix mustard, garlic, rosemary and oil and spread inside the meat.
  4. Place the Prosciutto on top.

For the stuffing

  1. Saute onion in a pan until soft and golden.
  2. Add the garlic and mushroom and cook for 3 minutes.
  3. Add spinach and cook until slightly wilted.
  4. Add the Black Mamba Cayenne Pesto
  5. Allow mixture to cool and spread on prosciutto.
  6. Roll up tightly and tie with a string
  7. Roast for 2 hours until slightly pink inside.
