Citrus and Blue Cheese salad

When Checkers set their sights on something, they really do make it happen. One of these things is their Cheese World. They just have so much freaking cheese, both local and international. There are about 400 or so to choose from – pretty much my ultimate fantasy. Another thing they do is cool blogger drops, like this one:

As assortment of ingredients to make a simple, but delicious salad. Thanks Checkers!

  • 2 oranges, peeled and sliced
  • Rocket
  • 1 bag mange tout, (they said blanch in hot water until bright green, but I left them fresh)
  • ½ cup walnuts, toasted until golden, then cooled
  • 100g Blue Cheese (I used way more)
  • Extra Virgin olive oil, to taste
  • Lemon, to taste
  • Salt and pepper, to taste

Rocket goes on platter. Scatter the mange tout, walnuts and orange slices. Crumble over the cheese. Dress it up. Delicious.

PS. With the left overs, I made another salad the next day. I made it the same way but left off the orange. Then added tuna, a little chilli and spring onion. YUM.
