The three-course menu begins with a choice of two starters. Beef Tartare combines roast bone marrow, salsa verde, burnt onion purée, egg yolk gel and toasted sourdough. The vegetarian Wild Mushroom Dumpling features a porcini and miso broth with gochujang, soy, spring onion and crispy tofu.

For the main course, diners can opt for the 300g Kalahari Beef Sirloin on the Bone, wood oven grilled and served with sweet potato chips and mushroom sauce. Coastal Linefish comes with a warm fennel and oyster mushroom salad, daikon, pickled ginger, sugar snap and a Champagne and yuzu miso sauce.

The vegetarian Roast Pumpkin Gnocchi brings grilled asparagus and long-stem broccoli together with black garlic purée, pine kernels, sage burnt butter and fresh lemon.

Dessert provides two suitably polished ways to finish the meal. Mille-Feuille Croustillant combines mascarpone mousse, tropical crémeux and Valrhona almond ice cream. Alternatively, Lemon Meringue features lemon curd, ginger biscuit, Italian meringue and Biscoff mousse.
