Charity Dinner at the Cargo Hold

Sound out this charity dinner at the Cargo Hold … As well known deaf chef Kurt Ramborger from the Viuda Bistro in Texas put it: “You don’t need ears to cook.” Yet, despite the fact that the South African hospitality industry is desperately short of good chefs, many potentially talented cooks never make it into the kitchen because of hearing disabilities.

That’s why uShaka Marine World’s Cargo Hold Chef, Warren Frantz and his team have decided to once again lay on a unique dinner at the Cargo Hold Restaurant on Thursday, October 2. The idea came from a visit to the Kwa Thintwa School for the Deaf at Inchanga two years ago and since then has helped create opportunities for those with hearing disabilities to take their places within the hospitality industry.

On Thursday, October 2, the Kwa Thintwa matric pupils will have an opportunity to be waiters and waitresses as well as help prepare the evening’s meal with chef Warren Frantz in the Cargo Hold kitchen.

“These young men and women deserve the same opportunities to become successful as those with good hearing. Initiatives such as these help boost their self-esteem and skills in the kitchen. This charity event aims to raise funds so that the school can purchase further kitchen and cooking equipment for their restaurant,” said Frantz

Dinner guests can look forward to a “Gourmand Tasting Menu” that includes a delicious smoked pea soup complimented by duck ravioli and smoked paprika butter accompanied by a Sauvignon Blanc for starters. This will be followed by a pan roasted chicken supreme, oyster mushroom, mustard, cauliflower puree with Chardonnay. For mains you will be sure to savour the Beef fillet, seared, slow braised oxtail, root vegetables, leek puree, sherry glaze accompanied by a Shiraz, Cabernet Sauvignon. Tonka Bean Panna Cotta featuring poached strawberries, jelly, honeycomb, cacao meringue and strawberry sorbet will be a fitting finish.
