Calamari Mediterranean by Marco’s Restaurant

Marco’s Restaurant‘s inherent Italian charm, Durban style and adventurous soul combined with his Italian mother’s wonderful cooking ability, helped create Marco’s Ristornate in 1999.

Having relished Mamma’s delicious authentic Italian cuisine at home, Marco saw this as the perfect opportunity to nature Italian culture by providing a platform for guests to enjoy the ceremony of food and socializing in a fashion that is truly Italian.

He recently published a few recipes on their website which we will feature on FoodBlogDBN. But if you don’t trust your cooking skills or want to rely on Italian expertise, just book a table and head over to Marco’s Restaurant instead.

Calamari in a spicy tomato sauce

The Ingredients

  • Good quality olive oil
  • 5 anchovy filets
  • 8 capers
  • 50mil white wine
  • 400g rosa tomatoes
  • 10 capers
  • Good bunch of Italian parsley chopped
  • Hand full of fresh basil
  • Some red chilli chopped
  • 1 garlic cloves finely sliced
  • 1kg cleaned squid sliced into rings

Directions
In a sauce pan heat the oil add the capers , anchovy , chilli and garlic, on low heat let the anchovies dissolve. Add the squid , fry for a minute or two add the tomatoes , white wine basil and parsley and let it simmer for a good 15 – 20 min , serve with some ciabatta bread.
