The Chef’s Table Menu at Dash Restaurant

I’ve been to Dash once before enjoying a very memorable fine-dining experience a few years ago. With a new chef at the helm, we were excited to see how things have changed as the focus shifted from fine dining with many molecular elements to an approach based on elegance. The dishes maintain South African elements, but there are hints of classic French, English and Asian flavours as well.

Capetonians have never liked the idea of joining a hotel for a dining experience. The Queen Victoria Hotel wants to give people the opportunity to explore the property, make it more approachable so everyone feels welcome to book a table at Dash.

The chef’s inspiration was simple: to create really good food using local ingredients. Combine flavours that are fun to eat to give all guests an experience to remember.

Mushroom Port Soup

Give me a dish with wild mushrooms and there is a good chance I will fall in love. Tell me it’s a soup, and I’ve already lost. A rich taste with an emulsion of flavours. It’s a dish I can only recommend. The waiters also pour the soup right in front of you which adds to the entire experience.

Candied Beetroot Tarte Tatin

The soup was followed by a candied beetroot tarte tatin with salted honeycomb, goats cheese mousse and citrus fruit. A wonderful dish where all elements toyed with each other to make a fun dish that is ready to be explored. Try each element on its own and then start combining to see how the flavours evolve.

Seared Prawns

Seared prawns where next up on the agenda with a corn bisque puree. The coconut spuma that accompanied this dish was super light and fluffy which allowed the prawns to shine. A delicious dish that is one of the most popular at Dash.

Seared Salmon & Chermoula Lamb Wellington

Next up, we moved on to the mains. The first being a wondefully seared salmon served with safron mash and a mussel tomato beurre blanc. Afterwards, we enjoyed a wonderful Lamb Wellington. Everyone knows of Beef Wellington but Lamb Wellington is something new and it works on all levels. It was served with a rich and creamy bearnaise sauce. Veggies on the side included mushroom, braised red cabbage and asparagus. Delicious!

Chocolate Gelee Mousse

To end the evening, we enjoyed a chocolate gelee mousse that cam with a mixed berry sorbet and macerated berries. Delicious but a bit too rich for my liking. I couldn’t finish this one as we already have quite a lot of food during the course of the evening.

Dash is a wonderful intimate restaurant and with the light piano sounds playing in the background makes for a beautiful ambiance. A bar is situated at the entrance so that guests can enjoy a drink before being seated. For any occasion, be it a birthday dinner, date night or a celebration, Dash comes highly recommended. An elegant menu that is paired perfectly with Creation wines bringing out a feast of flavours.
