The Saint James on Venice Luxury Boutique Hotel

Originally the home of Corobrick founder Robert Storm who built it in 1892, the hotel is steeped in Durban history and retains much of its old world charm. The 15 bedrooms are individually decorated in a classically elegant style with some having a view over the century’s old St James church and others of the hotel’s peaceful garden patio.

Orange Sponge Cake Recipe

The current Orange Sponge Cake was inspired by the staff of The Saint James on Venice, who have been kind enough to make the recipe available to us. Remember: The key to a light and fluffy sponge cake is to mix the eggs, butter and sugar well until light and fluffy

Ingredients:

  • 250 g butter
  • 2 cups caster sugar
  • 6 eggs
  • 2 tbs orange rind
  • 2 cups flour
  • 1 cup selfraising flour
  • ½ cup cream
  • ½ cup orange juice
  • 10 ml baking powder

Method:

  • With an electric mixer, beat the butter and sugar till pale
  • Add the eggs, one at a time, beating well after each addition (with electric mixer)
  • Add orange rind and juice, and stir to combine with mixer
  • Add dry ingredients and cream and stir well with spoon
  • Spoon in greased pan, and smooth.
  • Bake at 180 for about 30-40 minutes.
  • After baking brush with some Orange marmelade, or orange juice. Sprinkle with icing sugar

Tips:

  1. The below tin is a siitable size for this recipe alternatively use 2 normal cake tins
  2. For the sauce I make a mixture of golden syrup, marmalade and orange juice. Cook in the microwave until liquid and then pour over. I make quite a bit of this mixture (about 150 ml) so that it soaks through the top.
