Continuing its highly curated series of producer-led dining experiences, Four Seasons Hotel The Westcliff Johannesburg will host an exclusive one-night-only pairing dinner in collaboration with South African agave spirits producer Inzalo on 31 July 2026.
Taking place in the hotel’s intimate Yellow Room, the evening will showcase Executive Chef Rudi Liebenberg’s refined culinary approach alongside one of the country’s most exciting and internationally awarded new spirits.
The dinner forms part of the hotel’s ongoing programme of intimate culinary collaborations, designed to connect guests with exceptional South African producers through immersive menus, thoughtful pairings and memorable experiences.
- Inzalo exists to help pioneer the new world of agave spirits by focusing on slowly producing true, provenance-driven spirits with minimal intervention. Crafted from wild agave, grown in ancient marine soils of the Western Cape and produced in limited quantities, Inzalo has quickly attracted international acclaim for its complexity and authenticity.
It is made simply, with nothing added: wild agave, spring water and wild yeast, hand-harvested and slow-cooked, then rested in oak.
Now, for one evening only, Inzalo Batch One and a series of exceptionally limited single-barrel expressions, each rested in a different cask and produced in quantities of approximately 160-350 bottles per barrel, will be poured course by course alongside a menu built around them.

“What drew me to Inzalo is its authenticity,” says Chef Rudi Liebenberg, Executive Chef of Four Seasons Hotel The Westcliff Johannesburg. “It’s a spirit that expresses where it comes from, that naturally embraces a unique heritage and exceptional taste all of which gives us an exciting foundation from which to create.
“Each course has been developed around the character of a specific expression, resulting in a dining experience that is distinctly South African while reflecting the creativity and precision our guests expect from Four Seasons.”
Guests arrive to canapés, an oyster with Inzalo ceviche and tuna tartare cigars, alongside an opening Batch One cocktail. An amuse-bouche of yellowtail aguachile with citrus, avocado and coriander follows, served with Batch One neat or over ice, the purest expression of the spirit before the single barrels begin. From there the evening turns to the single barrels, the heart of the night. Each is the same spirit rested in a different cask, paired to its course.
