Help & Healing for Breast Cancer Survivors

World Cancer Day on February 4 calls for us all to “close the care gap”.

It’s a heartening sentiment at any level, but particularly when you acknowledge the South African context, where a lot of people are unable to access suitable healthcare.

It is a gap where many NGOs stand, including Reach for Recovery (R4R), which – even through the hard Covid lockdown years – reaches out to underprivileged breast cancer survivors, supplying silicone breast prostheses free of charge to those recovering and offering counselling and community to those undergoing treatment.

THE POWER OF PINK CAMPAIGN PROVIDES THE FINANCIAL MUSCLE

The South African Mushroom Farmers’ Association (SAMFA) runs the Power of Pink campaign through Pick n Pay stores nationally to fund this initiative, called the Ditto Project. Each October, R1 from every pink punnet of fresh mushrooms bought at Pick n Pay stores goes to this uplifting work.

R587 262 RAISED IN THE 2022 CAMPAIGN MAKES A DRAMATIC DIFFERENCE

In 2022, a total of R587 262 was raised this way; and since 2011, more than 8 350 silicone prostheses, costing in excess of R7.45 million, have been distributed through the Ditto Project to women who could not afford them. The Power of Pink campaign has contributed 99.3% of the total project costs.

REACH FOR RECOVERY CLOSES THE CARE GAP

Reach for Recovery has done its work for over 50 years, making it in many ways ahead of its time when viewed through the lens of the World Cancer Day directive. The organisers of the international event note particularly that “the reality today is who you are and where you live could mean the difference between life and death.

“When it comes to cancer, many of us are denied basic care, despite the fact that we live in a time of awe-inspiring advancements in cancer prevention, diagnosis and treatment. It isn’t fair. But we can change this.”

By consistently focusing on South Africa’s disadvantaged breast cancer survivors and closing the cancer care gap for them, R4R has done just that, embodying the very definition of care: ie, to “look after and provide for the needs of” others.

Having now fully resumed the Ditto Project Prosthesis Fitting Service, which sadly had to be halted due to Covid lockdown regulations, R4R last year managed to fit 562 women with individually colour- and size-matched external silicone breast forms.

AN UPDATE ON THE INCREDIBLE SILICONE BREAST PROSTHESIS

And there is more good news to come in 2023. Stephné Jacobs, Chairperson of Reach for Recovery, announced that, in conjunction with Style Products, a more comfortable and wearable prosthesis is going to be manufactured and distributed this year.

“I am delighted to announce the launch of a lighter weight silicone prosthesis,” says Stephné. “It will close the gap in quality care, and benefit women who do not have the resources to get the proper-fitting silicone prostheses they need to look and feel healthy again. These new prostheses naturally offer more comfort to the women we serve.

“The lighter prostheses are soft, look natural and beautiful and come with a cotton backing that will protect them in order to ensure they last longer.”

Each prosthesis container will now also include instructions on how to sew a pocket to an ordinary bra to hold the silicone prosthesis, thereby eliminating another costly obstacle to living a full life for those who cannot afford mastectomy bras.

SAMFA AND PICK N PAY MAKE A DIFFERENCE

“We love that we can contribute to the Ditto Project and have the chance to transform the lives of women,” states Ross Richardson, Chairperson of SAMFA. “We hope that Reach for Recovery increases the self-image and dignity of many more women in 2023 through their amazing offering.”

A MUSHROOM A DAY KEEPS THE DOCTOR AWAY

Research from 2010 at the Beckman Institute at the City of Hope Cancer Centre in California suggests that mushrooms can also help in the fight against breast cancer. It found that eating 10g of mushrooms a day – that’s just one button mushroom – more than halved the risk of developing breast cancer. This is backed up by several Asian population studies, which indicate that mushroom consumption appears to be inversely related to breast cancer risk.

So, by whichever means we can, let us all endeavour to close the cancer care gap, in our lives and the lives of our fellow South Africans.

Crispy Gnocchi with Mushrooms & Paprika Butter

serves 4

Ingredients

For the gnocchi:

  • 1 kg floury potatoes, washed & dried
  • 1 egg yolk
  • 30 g grated parmesan
  • Pinch ground nutmeg
  • 1 tsp salt
  • 100 g flour, plus more fordusting
  • 100 g butter
  • 500 g portabellini mushrooms, sliced
  • 2 tsp smoked sweet paprika
  • 1 handful / small bunch fresh sage leaves
  • Juice of ½ lemon
  • 100 g sun-dried tomatoes, roughly chopped
  • ½ cup crème fraîche
  • Parmesan shavings, to serve
  • Salt and pepper, to taste

Method

  1. Heat oven to 200˚C.
  2. Place potatoes on a baking tray and prick them all over with a fork.
  3. Bake for 1 hour or until very tender.
  4. Slice potatoes in half lengthwise. Allow excess steam to escape.
  5. When potatoes are cool enough to handle with a clean dish cloth, scoop the flesh out of the skins and pass through a potato ricer.
  6. If you don’t have one, simply mash them with a potato masher.
  7. In a bowl combine the potato, egg yolk ,parmesan, nutmeg and salt. Mix together with a fork.
  8. Sprinkle the flour evenly over the potato mixture and very gently fold the mixture together using a spatula.
  9. Turn dough onto a lightly floured work surface. Divide dough into 4. Roll each piece into a 2-3cm thick rope. Cut the rope into 3cm pieces.
  10. If you want to add the traditional little lines you can gently roll each piece down a wooden butter pat or the back of a fork.
  11. Place finished gnocchi on a lightly floured baking tray. Repeat with the remaining dough.
  12. Cook gnocchi in a pan of boiling salted water for 2 to 3 minutes – as soon as they float up to the surface they are cooked.
  13. Heat a large frying pan and add about 2 tbsp (30g) of the butter. Add the mushrooms and cook until golden brown. Season.
  14. Now add the rest of the butter and when sizzling add the paprika and sage. Cook until fragrant and nutty.
  15. Using a mesh spider or slotted spoon, drain the gnocchi and transfer directly to the pan and toss in the buttery mushrooms. Cook until the gnocchi start getting golden brown crispy bits on each side.
  16. Add sun-dried tomatoes and finish with a good squeeze of lemon juice.
  17. Season to taste.
  18. Serve gnocchi onto plates swished with a little crème fraîche. Finish with a few shavings of parmesan and serve.

Sautéed Portabellos, Steak, Coriander Mash & Pea Purée

serves 2

Ingredients

Coriander mash:

  • 4 medium potatoes (a floury variety)
  • 125 ml cream
  • 90 g butter, cut into cubes
  • 1 handful fresh coriander
  • Salt to taste

Pea purée:

  • 250 g frozen peas
  • 1 tbsp butter
  • Juice of ½ lemon
  • Salt to taste

For the Steak:

  • 400 g rump or ribeye steak
  • Avocado oil (or any oil with a high smokepoint)
  • 3 sprigs rosemary
  • 1 clove garlic, crushed
  • 2 tbsp butter
  • 2 large portabello mushrooms
  • Handful thyme sprigs
  • Olive oil
  • Salt and pepper, to taste

Instructions

For the coriander mash:

  1. Place potatoes in large pot and cover with cold water. Bring to a boil, season the water with salt and simmer until tender. Drain.
  2. When potatoes are cool enough to handle but still very hot- peel them and return the flesh to the warm pot.
  3. Mash potatoes in the warm pot allowing them to release steam and dry out slightly.
  4. Meanwhile, heat the cream in a saucepan until warm. Add the warm cream and butter to the potatoes.
  5. Stir through until completely smooth and then season well with salt. Roughly chop a handful of coriander and stir through the mash.

For the pea purée:

  1. Bring a medium sized pot of water to the boil, and salt generously.
  2. Blanch the peas for 2-3 minutes until tender. Plunge peas into an ice bath briefly and drain.
  3. Add the peas to a blender with the lemon juice and butter. Blitz the peas, adding splashes of water in very small additions if needed.
  4. Blend into a smooth purée and then pass through a fine sieve.
  5. Season with salt.

For the steak:

  1. Season steak all over with salt and pepper. Heat a large seasoned cast-iron pan over high heat.
  2. Brush steak generously with avocado oil and brush the pan with avocado oil.
  3. When the pan is smoking hot- cook the steak, turning every 2–3 minutes, until a dark crust forms on both sides and the steak is very rare.
  4. Reduce heat to medium- add butter, garlic, and rosemary. Baste steak with butter until done to your liking.
  5. Transfer steak to a board and it rest for 10-15 minutes.

For the mushrooms:

  1. Wipe pan with a paper towel and add a fresh drizzle of olive oil.
  2. Cook portabellos with a few sprigs of thyme, salt and pepper on high heat until golden brown but still nice and juicy.
  3. Serve steak with golden brown mushrooms, mash and pea purée.
