Roasted Mushrooms & Asparagus with Soft Boiled Eggs and Herb Vinaigrette

Serves 4

Ingredients:

  • 45ml red wine vinegar
  • 30ml fresh lemon juice
  • 45ml olive oil
  • 4 Tbsp fresh soft herbs, chopped (basil, coriander & Italian parsley work well)
  • 1 tsp honey
  • 8 large portobello mushrooms, whole
  • 350g asparagus, ends trimmed
  • 4 XL free-range eggs, room temperature
  • Watercress, to serve
  • Salt and pepper, to taste

Method:

For the vinaigrette:

  1. Mix all the ingredients together in a small bowl.
  2. Season lightly with salt and pepper.

For the veg:

  1. Preheat oven to 200˚C, fan on.
  2. Place portobellos on a baking tray.
  3. Spoon a little of the vinaigrette onto the mushrooms.
  4. Season with salt and pepper.
  5. Bake for about 10 minutes, depending on size, until tender and juicy.
  6. While the mushrooms are baking, bring a pot of salted water to the boil.
  7. Prepare an ice bath and have it ready next to the stove.
  8. Lower the asparagus into the boiling water.
  9. Cook for about 1 minute, depending on the thickness of the stems.
  10. Using tongs, remove the asparagus and plunge into ice water for a few minutes until cool.
  11. Drain and dry the asparagus on a clean kitchen towel.
  12. Using the same boiling water – add the 4 eggs gently, stir well to keep yolks in the centre, and set a timer for 6.5 minutes.
  13. Refresh the ice bath if necessary.
  14. When the timer goes off, plunge the eggs immediately into the ice bath and leave them until cool enough to handle easily.
  15. Peel the eggs and set aside until serving.

To serve:

  1. Slice the portobellos into halves or quarters.
  2. Plate along with the asparagus.
  3. Slice the eggs in half and dot around the serving platter. Season.
  4. Tuck the nutrient dense watercress in and around the plated veg and eggs for a pop of green and a good dose of antioxidants.
  5. Drizzle everything with the herb vinaigrette and serve!

Baked Mushroom Brown Rice

Serves 4

Ingredients:

  • 1 Tbsp olive oil
  • 1 onion, diced
  • 1 ½ cups long grain brown rice
  • 2 ½ cups water, boiled
  • 1 tsp salt
  • 500g mixed cultivated mushrooms, sliced into similar sized big chunks
  • 1 Tbsp olive oil
  • 2 cloves garlic, finely minced
  • 1 Tbsp soy sauce
  • 1 Tbsp balsamic vinegar
  • 1 bunch fresh thyme sprigs
  • Salt and pepper, to taste
  • Micro herbs, to serve
  • Lemon wedges, to serve

Method:

  1. Preheat oven to 180˚C.
  2. Heat the olive oil in a 26cm saucepan with a lid / buffet casserole.
  3. Add the onion and cook until soft.
  4. Add the rice and coat in the onion and olive oil.
  5. Pour the boiling water into the dish and sprinkle over the teaspoon of salt.
  6. Stir briefly just to mix and then cover tightly with aluminium foil.
  7. Place the pan lid on top to ensure the seal is tight.
  8. Bake in the oven for 50 minutes.
  9. While the rice is baking combine the mushrooms in a bowl with the olive oil, garlic, soy, balsamic and thyme. Season lightly and mix well.
  10. After 50 minutes, remove the lid and foil from the rice.
  11. Fluff the rice with a fork.
  12. Spoon the mushrooms on top of the rice and turn oven up to 200˚C.
  13. Bake mushrooms on top of the  rice for 10-15 minutes until mushrooms are tender and juicy.
  14. Zest the lemon over the entire dish and squeeze over some lemon juice.
  15. Top with micro herbs and serve family style in the pan on the table.

Serve with lemon wedges on the side and enjoy!

Over 100 guests were invited to Signature restaurant to taste their “new menu”.

They were served an all new 3 course menu which they all believed was designed by Signature’s culinary team. Much to the guest’s surprise, the entire menu was designed and prepared by three home cooks, Ameer Cloete, Gina Moakamedi and Angelique Booyens.

The evening was designed to launch the Robertsons Famous for Flavour campaign which aims to recognise and celebrate everyday cooks who are passionate about food, flavours and cooking for those around them. 

Through this campaign and partnership with our initial three home cooks, we hope to showcase that with Robertsons, anyone can be famous for flavour if they want to be. Gina, Ameer and Angelique have the ability to create beautiful dish experiences and we want to give them the platform to showcase this flavour with the country. – says Dehné Peters, Senior Brand Manager at Robertsons,

Ameer Cloete is a 31 year old amateur baker whose career has oscillated between teaching and marketing but what has been his consistent love is the kitchen. He created the Asian Chicken Dumplings starter and Cinnamon Spiced Ice Cream dessert.

“The past few days passed by in a blur of flames, ice cream, crushed chili and ground cinnamon”, laughs Ameer. “It was fun to be in the kitchen with the Signature chefs, working and learning from them. The campaign has presented a great opportunity to meet new like-minded people with a love for cooking,” concludes Ameer.

34 year old Gina expertly juggles her passionate home cook role  with her role of being a full time mechanical engineer. She created the Traditional Oxtail main course and the Malva Pudding dessert which attendees raved about.

“I feel honoured to have been chosen to be a part of this campaign. Robertsons is a brand I resonate with as I’ve been using their spices since I was a teenager. My experience over the past few days has been humbling and amazing. I felt so at home working in the kitchen at Signature. The experience that the brand has given me has been reaffirming and validating and a reminder that my passion and dreams are valid. This campaign has made me feel like I belong. I’m never going to forget this”, says Gina.

Angelique is a 27 year old  food photographer and stylist who owns a Cape Town based studio, The Good Roots. She has a zest for travelling and has already been to Israel, Argentina, Brazil, and Istanbul- a perfect match for Robertson’s penchant for discovery.  Angelique created the Prosciutto Wrapped Figs starter and the Spicy Chickpea Curry.

When asked what the brand hopes to achieve through the campaign, Peters said, “Our hope is that the campaign will allow us to re-invigorate interest and brand love with our citizens. We also want to encourage them to use our iconic, expertly blended spices as the key ingredient to delivering a flavour punch in any dish, everytime.”

The Robertsons Famous for Flavour campaign doesn’t end with Ameer, Gina and Angelique. Robertsons Spices is looking for nine more home cooks.

Robertsons is inviting South Africans to enter the Famous for Flavour competition to stand a chance to win their share of close to R300 000 in prizes including cash prizes of up to R20,000.
