{"id":9870,"date":"2021-06-10T17:03:34","date_gmt":"2021-06-10T15:03:34","guid":{"rendered":"http:\/\/www.food-blog.co.za\/joburg\/?p=9870"},"modified":"2021-06-10T17:05:23","modified_gmt":"2021-06-10T15:05:23","slug":"smoked-salmon-samfa-frittata-recipe","status":"publish","type":"post","link":"https:\/\/www.food-blog.co.za\/joburg\/smoked-salmon-samfa-frittata-recipe\/","title":{"rendered":"Smoked Salmon &#038; Mushroom Frittata Recipe"},"content":{"rendered":"<p><strong>Father&#8217;s Day is all about Dad and one of the best ways to treat him is to make him his favourite meal.<\/strong><\/p>\n<p>So, whether he&#8217;s a brunch, breakfast, lunch or a lazy supper around the fire kinda Dad, we&#8217;ve got you covered.<\/p>\n<blockquote>\n<p style=\"text-align: center;\">Great recipes for any time of day, super easy to make and even more delicious!<\/p>\n<\/blockquote>\n<p>If you&#8217;d like to make his day, find three delicious recipes for you to try:<\/p>\n<ul>\n<li>Brunch:\u00a0Smoked Salmon &amp; Mushroom Frittata<\/li>\n<li><a href=\"http:\/\/www.food-blog.co.za\/joburg\/duck-samfa-pancakes-recipe\/\"><strong>Lunch:\u00a0Duck &amp; Mushroom Pancakes<\/strong><\/a><\/li>\n<li><a href=\"http:\/\/www.food-blog.co.za\/joburg\/samfa-mozzarella-fondue-recipe\/\"><strong>Dinner:\u00a0Mushroom &amp; Mozzarella Fondue<\/strong><\/a><\/li>\n<\/ul>\n<h3>Smoked Salmon &amp; Mushroom Frittata<\/h3>\n<p><em>Served with KWV 10 Year Brandy &amp; Cold Brew Cocktail<\/em><\/p>\n<p><em>Serves 4-6<\/em><\/p>\n<p><strong>Ingredients:<\/strong><\/p>\n<ul>\n<li>8 XL free-range eggs<\/li>\n<li>125ml milk or cream<\/li>\n<li>Salt and pepper, to taste<\/li>\n<li>200g baby spinach, stems removed<\/li>\n<li>2 Tbsp olive oil<\/li>\n<li>250g portabellini or button mushrooms, sliced<\/li>\n<li>100g fresh baby fennel, sliced<\/li>\n<li>1 bunch spring onions, sliced and divided in 2<\/li>\n<li>100g smoked salmon<\/li>\n<li>60g soft goat\u2019s cheese \/ soft cheese of choice<\/li>\n<li>To serve: Fresh dill &amp; lemon wedges<\/li>\n<\/ul>\n<p><strong>Method:<\/strong><\/p>\n<ol>\n<li>Preheat the oven to 200 \u00b0C.<\/li>\n<li>Place baby spinach in a colander and pour over a kettle of boiling water to quickly blanch the spinach. Squeeze out all the excess water and roughly chop.<\/li>\n<li>Heat olive oil in a cast iron pan. Fry mushrooms until they release their liquid and begin to brown. Add the baby fennel and half the spring onions. Cook until just tender.<\/li>\n<li>Add the spinach to the pan and mix. Season.<\/li>\n<li>Whisk together the eggs and milk. Season well with salt and pepper.<\/li>\n<li>Turn the heat down to medium low and pour the egg mixture over the vegetables. Distribute things nice and evenly.<\/li>\n<li>While the mixture is cooking arrange the smoked salmon and cheese on top of the egg mixture.<\/li>\n<li>Once the frittata starts appearing cooked around the edges transfer it to the oven.<\/li>\n<li>Bake for 15-20 minutes or until the eggs are set and the frittata has slightly puffed up.<\/li>\n<li>Scatter with the remaining spring onions and some fresh dill and serve.<\/li>\n<\/ol>\n<p><strong>KWV 10 Year Brandy &amp; Cold Brew Cocktail <\/strong><\/p>\n<p><em>Makes 1 cocktail<\/em><\/p>\n<p><strong>Ingredients:<\/strong><\/p>\n<ul>\n<li>50ml cold brew coffee<\/li>\n<li>50ml KWV 10 year Brandy<\/li>\n<li>50ml full cream milk<\/li>\n<li>25ml simple syrup<\/li>\n<li>3-4 coffee beans, for garnish<\/li>\n<\/ul>\n<p><strong>Method:<\/strong><\/p>\n<ol>\n<li>In a shaker filled with ice combine the cold brew, brandy, milk and simple syrup. Shake well.
