[Recipe]"},"content":{"rendered":"<p><strong>Get cooking now to celebrate National Pie Day on the 23rd of January!\u00a0<\/strong><\/p>\n<p>Who doesn&#8217;t love a good pie and if it&#8217;s not only delicious but a healthier option, there&#8217;s no reason for us to not tuck in!<\/p>\n<p>We&#8217;ve picked a great recipe with butternut, mushrooms and nuts to put a gourmet spin on the standard comfort pies you usually find in the shops. With different textures, and flavours as well as healthy ingredients, you&#8217;ll be experimenting with many more pie fillings for months to come.<\/p>\n<h3><strong>Moroccan Butternut, Mushroom &amp; Nut Phyllo Pot Pies <\/strong><\/h3>\n<p><strong>Serves 4 &#8211; 6<\/strong><\/p>\n<p><strong>Filling<\/strong><\/p>\n<ul>\n<li>10ml olive oil<\/li>\n<li>15ml butter<\/li>\n<li>150g button or portabellini mushrooms, quartered<\/li>\n<li>100g baby mushrooms<\/li>\n<li>5ml paprika<\/li>\n<li>5ml ground cumin<\/li>\n<li>salt and milled black pepper<\/li>\n<li>500g roasted butternut, cubed<\/li>\n<li>125g feta cheese<\/li>\n<li>45ml dukkah<\/li>\n<li>50g flaked almonds, toasted and crumbled<\/li>\n<li>45ml fresh coriander, chopped<\/li>\n<\/ul>\n<p><strong>Phyllo Pot Pies<\/strong><\/p>\n<ul>\n<li>45ml olive oil<\/li>\n<li>6 sheets phyllo pastry, trimmed into large squares<\/li>\n<li>30ml white sesame seeds<\/li>\n<\/ul>\n<p><span style=\"text-decoration: underline;\">To Serve:<\/span><\/p>\n<ul>\n<li>fresh coriander leaves<\/li>\n<\/ul>\n<p><strong>Filling:<\/strong><\/p>\n<ol>\n<li>Heat the oil and butter in a pan and fry the mushrooms and button mushrooms for 5 minutes.<\/li>\n<li>Add the paprika and ground cumin and cook for 2 minutes.<\/li>\n<li>Turn off the heat and add the remaining ingredients.<\/li>\n<li>Gently combine and set aside.<\/li>\n<\/ol>\n<p><strong>Phyllo Pot Pies:<\/strong><\/p>\n<ol>\n<li>Preheat the oven to 200\u00b0<\/li>\n<li>Brush the sheets of phyllo pastry lightly with olive oil and arrange on top of each other in an overlapping stack.<\/li>\n<li>Place the cooled filling in the centre of the pastry and enclose the filling in the pastry.<\/li>\n<li>Brush the top with olive oil and scatter the sesame seeds over the top.<\/li>\n<li>Transfer the pie to a baking sheet and bake for 20 \u2013 30 minutes, or until golden and crispy.<\/li>\n<\/ol>\n<p><a href=\"https:\/\/www.mushroominfo.co.za\/\"><strong>You can find many more delicious recipes on the SAMFA website!<\/strong><\/a><\/p>\n","protected":false},"excerpt":{"rendered":"<p>Get cooking now to celebrate National Pie Day on the 23rd of January!\u00a0 Who doesn&#8217;t love a good pie and if it&#8217;s not only delicious but a healthier option, there&#8217;s no reason for us to not tuck in!
