{"id":7785,"date":"2020-05-19T12:16:05","date_gmt":"2020-05-19T10:16:05","guid":{"rendered":"http:\/\/www.food-blog.co.za\/joburg\/?p=7785"},"modified":"2020-05-24T21:32:29","modified_gmt":"2020-05-24T19:32:29","slug":"braai-cooking-from-the-heart","status":"publish","type":"post","link":"https:\/\/www.food-blog.co.za\/joburg\/braai-cooking-from-the-heart\/","title":{"rendered":"Tasty &#038; Heart Healthy Braai Recipes to try during The Lockdown"},"content":{"rendered":"<p>During the COVID-19 outbreak, South Africans are encouraged to eat healthily to boost immunity and lower their risk of diseases of lifestyle, such as heart disease and type 2 diabetes.<\/p>\n<p>For those who love braaiing, Pharma Dynamics has teamed up with well-known food consultant and cookbook author, Heleen Meyer and the Heart and Stroke Foundation (HSF) to develop heart-healthy braai recipes as part of its popular, <em>Cooking from the Heart<\/em> cookbook series.<\/p>\n<p>Nicole Jennings, spokesperson for Pharma Dynamics says the braai edition contains 30 recipes that cater for meat-eaters and vegetarians alike. \u201cThe recipes include healthy, homemade marinades and seasonings, snacks, sides and salads, as well as vegetarian dishes and even desserts.<\/p>\n<p>\u201cMany of the meals we share are around a braai fire, but it is often accompanied by food that\u2019s not healthy for our hearts. Our aim is to make people a bit more conscious of the nutritional faux pas they make when braaiing.\u201d<\/p>\n<p>The recipes are all easy to make, affordable and consist of essential ingredients, which make them ideal for cooking during the lockdown. It even carries Jan Braai\u2019s stamp of approval!<\/p>\n<p>Try some of these recipes from <em>Cooking from the Heart\u2019s<\/em> special braai edition:<\/p>\n<ul>\n<li><a href=\"http:\/\/www.food-blog.co.za\/joburg\/braai-cooking-from-the-heart\/\"><strong>Veggie Skewers<\/strong><\/a><\/li>\n<li><a href=\"http:\/\/www.food-blog.co.za\/joburg\/slaw-cooking-from-the-heart\/\"><strong>Colourful Slaw with Ginger &amp; Peanuts<\/strong><\/a><\/li>\n<li><a href=\"http:\/\/www.food-blog.co.za\/joburg\/mielie-cooking-from-the-heart\/\"><strong>Mealie Meal &amp; Corn Bake<\/strong><\/a><\/li>\n<li><a href=\"http:\/\/www.food-blog.co.za\/joburg\/chocolate-fondue-cooking-from-the-heart\/\"><strong>Chocolate Fondue<\/strong><\/a><\/li>\n<\/ul>\n<p><strong>VEGGIE SKEWERS<\/strong><\/p>\n<p>These skewers are delicious braaied over the coals.<\/p>\n<ul>\n<li>125 g button mushrooms, halved<\/li>\n<li>3 baby marrows, thickly sliced<\/li>\n<li>200 g baby tomatoes<\/li>\n<li>1 green, yellow or red pepper, seeded and cut into large cubes<\/li>\n<li>15 &#8211; 20 bay or fresh lemon or lime leaves (optional)<\/li>\n<li>8 &#8211; 10 metal skewers or wooden kebab sticks, soaked in water for 30 minutes<\/li>\n<li>\u00bc cup (60 ml) olive or canola oil<\/li>\n<li>3 tbsp (45 ml) lemon juice<\/li>\n<li>1 tbsp (15 ml) finely grated lemon rind<\/li>\n<li>2 tsp (10 ml) each chopped fresh thyme, origanum and parsley<\/li>\n<li>1 clove of garlic, crushed black pepper to taste<\/li>\n<li>\u00bd tsp (2,5 ml) salt<\/li>\n<\/ul>\n<p><span style=\"text-decoration: underline;\"><strong>Method<\/strong><\/span><\/p>\n<ol>\n<li><strong> Place <\/strong>mushrooms in a shallow dish and cover with boiling water. Soak for 8 \u2013 10 minutes to prevent the mushrooms from breaking apart when skewered. Drain well and pat dry.<\/li>\n<li><strong> Thread <\/strong>mushrooms and veggies onto skewers or kebabs sticks, alternating the different veggies for a colourful end result. Add 1 &#8211; 2 bay, lemon or lime leaves in between veggies.<\/li>\n<li><strong> Mix <\/strong>oil, lemon juice and rind, herbs and garlic together and season with pepper.<\/li>\n<li><strong> Brush <\/strong>oil mixture onto skewers on all sides and marinate for 30 minutes. Season skewers with salt.<\/li>\n<li><strong> Grill <\/strong>over medium to low coals or until the veggies are just cooked, but not too soft. Brush with more of the marinade, while braaiing, if necessary.<\/li>\n<li><strong> The <\/strong>kebabs can be served with the Pea &amp; yoghurt dip or Cottage cheese dip on pages 48 and 49.
