What\u2019s more, finding ways to create healthy balanced meals can get tedious after a while.<\/p>\n<blockquote><p>Fruits and vegetables are a great source of Vitamin C, and fruit juice high in vitamin C can give you an extra healthy boost.<\/p><\/blockquote>\n<p>Try using juice in your cooking, or enjoy it chilled straight from the glass \u2013 these easy recipes from Rhodes Quality 100% fruit juices are all high in vitamin C so you can ensure you\u2019re getting some goodness, with a lot of deliciousness.<\/p>\n<p>Try these ideas for inspiration:\u00a0<a href=\"http:\/\/www.food-blog.co.za\/joburg\/pineapple-and-passion-fruit-smoothie-rhodes\/\">pineapple and passion fruit smoothie<\/a>, <a href=\"http:\/\/www.food-blog.co.za\/joburg\/apple-juice-granola-recipe-rhodes\/\">apple juice granola<\/a>,\u00a0<a href=\"http:\/\/www.food-blog.co.za\/joburg\/apple-and-kiwifruit-salad-dressing-rhodes\/\">apple and kiwifruit salad dressing<\/a>,\u00a0easy pancakes with sweet orange sauce\u00a0and a\u00a0<a href=\"http:\/\/www.food-blog.co.za\/joburg\/mango-sunrise-mocktail-recipe-rhodes\/\">mango sunrise mocktail<\/a>.<\/p>\n<h3><strong>Easy Pancakes with Sweet Orange Sauce \u2013 goodness and delicious<\/strong><\/h3>\n<table width=\"621\">\n<tbody>\n<tr>\n<td width=\"245\"><strong><em>INGREDIENTS<\/em><\/strong><\/td>\n<td width=\"376\"><strong>METHOD<\/strong><\/td>\n<\/tr>\n<tr>\n<td width=\"245\">\n<h3><strong>Pancake Batter<\/strong><\/h3>\n<p>\u25cf \u00a0\u00a0 250 g cake flour<\/p>\n<p>\u25cf\u00a0\u00a0\u00a0\u00a0 10 ml (2 t) baking powder<\/p>\n<p>\u25cf\u00a0\u00a0\u00a0\u00a0 1 ml (\u00bc t) salt<\/p>\n<p>\u25cf\u00a0\u00a0\u00a0\u00a0 2 eggs<\/p>\n<p>\u25cf\u00a0\u00a0\u00a0\u00a0 125 ml (\u00bd C) sunflower oil<\/p>\n<p>\u25cf\u00a0\u00a0\u00a0\u00a0 5 ml (1 t) vinegar<\/p>\n<p>\u25cf\u00a0\u00a0\u00a0\u00a0 750 ml (3 C) milk<\/p>\n<p>\u25cf\u00a0\u00a0\u00a0\u00a0 a little sunflower oil for frying<\/p>\n<h3><strong>Orange Sauce<\/strong><\/h3>\n<ul>\n<li>500 ml (2 C) Rhodes Quality 100 % Orange Fruit Juice<\/li>\n<li>190 ml (\u00be C) Rhodes Quality Seville Orange Marmalade<\/li>\n<li>19 ml (\u00be C) orange liqueur (Triple Sec or Cointreau) (optional)<\/li>\n<li>30 ml (2 T) lemon juice, freshly squeezed<\/li>\n<li>125 ml (\u00bd C) butter, cubed<\/li>\n<\/ul>\n<h3><strong>To Serve<\/strong><\/h3>\n<ul>\n<li>1 x 410 g can Rhodes Quality Pineapple Pieces in Syrup, drained<\/li>\n<li>4 segmented oranges or naartjies<\/li>\n<li>whipped cream<\/li>\n<\/ul>\n<\/td>\n<td width=\"376\">\n<h4><strong>Pancakes<\/strong><\/h4>\n<p>1.\u00a0\u00a0\u00a0 Sift the cake flour, baking powder and salt together.<\/p>\n<p>2.\u00a0\u00a0\u00a0 Whisk the eggs, oil, vinegar and milk together.<\/p>\n<p>3.\u00a0\u00a0\u00a0 Slowly whisk the egg mixture into the flour forming a thick lump-free batter at first, then as more liquid is added \u2013 a smooth pourable batter.<\/p>\n<p>4.\u00a0\u00a0\u00a0 Heat a little oil in a non-stick frying pan.<\/p>\n<p>5.\u00a0\u00a0\u00a0 Turn the heat to medium and pour off any excess oil.<\/p>\n<p>6.\u00a0\u00a0\u00a0 Add about 65 ml to 125 ml (\u00bc C to \u00bd C) of batter to the pan and swirl the pan around so that the batter settles in an even layer.<\/p>\n<p>7.\u00a0\u00a0\u00a0 Cook the pancake for about 2 minutes or until the base is golden before flipping over the pancake and cooking for a further 1 minute on the other side.<\/p>\n<p>8.\u00a0\u00a0\u00a0 Transfer the pancake to a plate and repeat with the remaining batter.<\/p>\n<h4><strong>Orange Sauce<\/strong><\/h4>\n<p>1.\u00a0\u00a0\u00a0 Place the Rhodes Quality 100% Orange Fruit Juice in a small saucepan.<\/p>\n<p>2.\u00a0\u00a0\u00a0 Add the Rhodes Quality Seville Orange Marmalade and heat to boiling point.<\/p>\n<p>3.\u00a0\u00a0\u00a0 Reduce the heat and simmer until slightly thickened.<\/p>\n<p>4.\u00a0\u00a0\u00a0 Add the liqueur if using and the lemon juice.<\/p>\n<p>5.\u00a0\u00a0\u00a0 Increase the heat and bring the mixture back up to just below boiling point.<\/p>\n<p>6.\u00a0\u00a0\u00a0 Remove from heat and add the butter, one cube at a time, mixing each cube in well before adding another.<\/p>\n<h4><strong>To Serve<\/strong><\/h4>\n<p>1.\u00a0\u00a0\u00a0 Layer the pancakes in a stack alternating with a layer of the orange or naartjie segments, the Rhodes Quality Pineapple Pieces, and the cream.<\/p>\n<p>2.\u00a0\u00a0\u00a0 Pour the orange syrup over the pancakes and serve.<\/td>\n<\/tr>\n<\/tbody>\n<\/table>\n<p><strong>A simple layered, easy-to-make pancake dessert, filled with fruity bites and cream.
