I mean, what is there about them not to absolutely love? Avo season is literally one of my favourite times of the year as I can eat these orbs of goodness with joyous abandon. So when I was asked by ZZ2 to create an avocado-based recipe for a competition \u2013 my mind went a haywire.<\/p>\n<p style=\"text-align: justify;\">But what could I make that would be different? Avo chocolate mousse? Boring. Avo ice cream? Nah. Avo smoothies? Meh. There was also the worry that whatever I made, the avo needed to be king of the dish. In other words, if the avo wasn\u2019t there, the plate would be empty. And although I wanted the dish to be beautiful, it needed to be super easy, so that anyone could make it. Or what\u2019s the point?<\/p>\n<p style=\"text-align: justify;\">And so my trio of avo starter was born. A combination of textures, flavours and temperatures, to show just how versatile this fruit is, both in how you cook it and how their flavour changes.<\/p>\n<p style=\"text-align: justify;\"><a href=\"http:\/\/www.food-blog.co.za\/joburg\/wp-content\/uploads\/2013\/11\/Small-2-.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-74\" alt=\"Small-2-\" src=\"http:\/\/www.food-blog.co.za\/joburg\/wp-content\/uploads\/2013\/11\/Small-2-.jpg\" width=\"750\" height=\"563\" srcset=\"https:\/\/www.food-blog.co.za\/joburg\/wp-content\/uploads\/2013\/11\/Small-2-.jpg 750w, https:\/\/www.food-blog.co.za\/joburg\/wp-content\/uploads\/2013\/11\/Small-2--300x225.jpg 300w\" sizes=\"auto, (max-width: 750px) 100vw, 750px\" \/><\/a><\/p>\n<p><b>Avocado soup<\/b><\/p>\n<p>Texture: Smooth<\/p>\n<p>Flavour: Delicate<\/p>\n<p>Temperature: Chilled<\/p>\n<p>A rich, delicate cold soup with cucumber, pea, mint and sour cream.<\/p>\n<p><b>Avo and Salmon ceviche<\/b><\/p>\n<p>Texture: Chunky<\/p>\n<p>Flavour: Sharp and Spicy<\/p>\n<p>Temperature: Room temperature<\/p>\n<p>Chunks of avo interspersed with salmon, topped with thingy sliced radish and a lemony chilli salsa.<\/p>\n<p><b>Avo Chips<\/b><\/p>\n<p>Texture: Crunchy<\/p>\n<p>Flavour: \u201cTempura\u201d<\/p>\n<p>Temperature: Warm on the outside, cool on the inside.<\/p>\n<p>Chunky avo slices flash fried in a matzah meal batter.<\/p>\n<p>.<\/p>\n<h3>The Recipes<\/h3>\n<p><b>Avocado soup<\/b><\/p>\n<ul>\n<li>2 avocados peeled and chopped.<\/li>\n<li>\u00bd English cucumber, peeled.<\/li>\n<li>1-cup baby peas, thawed.<\/li>\n<li>\u00bd cup cold water.<\/li>\n<li>Salt and pepper to taste<\/li>\n<li>Sour cream to garnish.<\/li>\n<\/ul>\n<p>Combine and blend all the ingredients, except for sour cream. When smooth place in bowl and top with cream and black pepper.<\/p>\n<p><b>Avo and Salmon ceviche<\/b><\/p>\n<ul>\n<li>1 avo, chopped into squares.<\/li>\n<li>1 Fresh salmon fillet, chopped into squares.<\/li>\n<li>A handful of radishes, thinly sliced.<\/li>\n<\/ul>\n<p>(For salsa)<\/p>\n<p>1 tomato, \u00bc cucumber, \u00bd onion, bunch of coriander, 1 chilli, chopped and dressed with olive oil, lemon juice and salt.<\/p>\n<p>Toss avo and salmon in lemon juice and a pinch of salt. Let sit for 5 minutes. The salmon will \u201ccook\u201d from the acidity. Layer them on the plate. Top with thin slices of radish. Top with salsa.<\/p>\n<p><b>Avo Chips<\/b><\/p>\n<ul>\n<li>1 avo, sliced lengthways.<\/li>\n<li>2 eggs, beaten<\/li>\n<li>\u00bd cup flour<\/li>\n<li>\u00bd cup matza meal<\/li>\n<li>salt and pepper to taste<\/li>\n<li>Oil for frying<\/li>\n<\/ul>\n<p>Slice avo into \u201cchips\u201d. Season the flour with salt and pepper. Coat avo in flour, then egg, then Matza meal. I use matzah meal as it is already \u201ccooked\u201d and doesn\u2019t need lengthy frying. This means that the avo wont be hot all the way through. Heat oil on high. Carefully drop in avo slices for not more than a minute.<\/p>\n<p><b>Sides<\/b><\/p>\n<p>Because you never know how people like their food seasoned, I chose to add extra sliced of chilli, lemon, salt and pepper that can be used along with any of the trio of starters.<\/p>\n","protected":false},"excerpt":{"rendered":"<p>I don\u2019t trust people who don\u2019t like avocado.
