This matters because gut bacteria help regulate the immune system and protect against invading pathogens that cause disease. In fact, more than 65% of the body\u2019s immune system \u201clives\u201d in the gut. Avocados are also high in copper (33%), and this nutrient, together with the antioxidants lycopene and beta-carotene, supports, maintains and regulates immune function.<\/p>\n<p>But avocados offer more than nutritional value alone, they also bring comfort, flavour and versatility to winter meals.<\/p>\n<p>Think about all the dishes that instantly become more satisfying with avocado added to the mix. Season with salt and pepper. Marinate for at least 3 hours or preferably overnight.<\/li>\n<li>Preheat the oven to 200 \u00b0C. Bake the chicken, covered, for 1 hour.<\/li>\n<li>For the sauce, heat a splash of oil and the butter in a large oven proof frying pan. Fry the ginger, garlic, curry powder, cumin and paprika for 1 minute until fragrant.<\/li>\n<li>Add the tomato paste, tomatoes and sugar and cook for 5 minutes. Stir through the cream. Season with salt and pepper.<\/li>\n<li>Remove the chicken from the oven and add directly to the hot sauce (discard marinade). Cover and bake for 1 hour or until tender.<\/li>\n<li>For the avo crema, blitz together the yoghurt and avocado until smooth. Season with salt and pepper.<\/li>\n<li>To serve, combine the avocado with a squeeze of extra lemon juice and coriander. Season with salt and pepper. Serve with the curry, rice and avo crema.<\/li>\n<\/ol>\n<h3><strong>Creamy Orzo with Chicken, Avo and Lemon <\/strong><\/h3>\n<p>Serves 2-4<\/p>\n<p>Preparation time: 15 minutes<\/p>\n<p>Cooking time: 20 minutes<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-130389\" src=\"http:\/\/www.food-blog.co.za\/wp-content\/uploads\/2026\/07\/AvoOrzo3.jpg\" alt=\"\" width=\"1725\" height=\"1150\" \/><\/p>\n<p><strong>Ingredients:<\/strong><\/p>\n<ul>\n<li>Avocado or olive oil for cooking<\/li>\n<li>30 ml (2 tbsp) Cajun spice<\/li>\n<li>2 chicken breasts, sliced into strips<\/li>\n<li>Juice of \u00bd lemon + extra<\/li>\n<li>2 garlic cloves, crushed<\/li>\n<li>250 ml (1 cup) orzo pasta<\/li>\n<li>625 ml (2\u00bd cups) chicken stock<\/li>\n<li>125 ml (\u00bd cup) cream<\/li>\n<li>Salt and pepper<\/li>\n<li>Handful dill + extra<\/li>\n<li>1 avocado, sliced<\/li>\n<\/ul>\n<p><strong>Method:<\/strong><\/p>\n<ol>\n<li>Heat a splash of oil in a large frying pan on medium-high. Mix the Cajun spice through the chicken and fry for about 3 minutes on each side until golden. Squeeze over the lemon juice. Remove chicken from the pan and keep aside.<\/li>\n<li>Add another splash of oil to the pan and fry the garlic and orzo for 2 minutes, while stirring, until toasted. Add the stock, cover and cook for about 8 minutes or until orzo is tender.<\/li>\n<li>Return the chicken with the cream, bring to a simmer and cook for 3 minutes. Season with salt and pepper. Remove from heat and stir through dill.<\/li>\n<li>Serve topped with avocado, garnished with extra dill and lemon slices, with a drizzle of oil over the top.<\/li>\n<\/ol>\n","protected":false},"excerpt":{"rendered":"<p>Winter has a way of slowing life down.
