{"id":17777,"date":"2025-02-11T12:59:48","date_gmt":"2025-02-11T10:59:48","guid":{"rendered":"http:\/\/www.food-blog.co.za\/joburg\/?p=17777"},"modified":"2025-02-20T16:44:00","modified_gmt":"2025-02-20T14:44:00","slug":"a-wholesome-valentines-day-feast-with-a-samfa-harvest-bowl-delight","status":"publish","type":"post","link":"https:\/\/www.food-blog.co.za\/joburg\/a-wholesome-valentines-day-feast-with-a-samfa-harvest-bowl-delight\/","title":{"rendered":"A Wholesome Valentine&#8217;s Day Feast with a Mushroom Harvest Bowl Delight"},"content":{"rendered":"<p data-pm-slice=\"1 1 []\"><strong>Valentine&#8217;s Day is often synonymous with indulgent treats, but for those seeking a fresh, healthy twist on romance, this Mushroom Harvest Bowl offers the perfect solution.<\/strong><\/p>\n<blockquote>\n<p style=\"text-align: center;\" data-pm-slice=\"1 1 []\">Crafted with vibrant, nutrient-packed ingredients, this recipe caters to health-conscious food lovers who crave both beauty and flavor on their plates.<\/p>\n<\/blockquote>\n<p data-pm-slice=\"1 1 []\"><span style=\"text-decoration: underline;\"><strong> Presented by the South African Mushroom Farmers&#8217; Association, this visually stunning dish is quick to prepare, making it ideal for a romantic evening for two.<\/strong> <\/span><\/p>\n<ul>\n<li data-pm-slice=\"1 1 []\">From the tangy pickled cauliflower to the creamy avocado dressing, every element is thoughtfully balanced to create a symphony of taste and texture that celebrates love and mindful eating.<\/li>\n<\/ul>\n<h3><strong>Mushroom Harvest Bowl <\/strong><\/h3>\n<p>Serves 2<\/p>\n<p><strong>Ingredients:<\/strong><\/p>\n<p><strong>Pickled cauliflower:<\/strong><\/p>\n<ul>\n<li>1 cup apple cider vinegar<\/li>\n<li>1 cup water<\/li>\n<li>1 Tbsp black mustard seeds<\/li>\n<li>2 Tbsp sea salt<\/li>\n<li>2 Tbsp sugar<\/li>\n<li>1 small head cauliflower, cut into florets \/ 300g cauli blossom florets<\/li>\n<\/ul>\n<p><strong>Avocado dressing:<\/strong><\/p>\n<ul>\n<li>1 avocado, pitted<\/li>\n<li>\u00bc cup olive oil<\/li>\n<li>2 Tbsp lemon juice<\/li>\n<li>2 Tbsp blood orange juice<\/li>\n<li>2 Tbsp fresh basil leaves, chopped<\/li>\n<li>\u00bd garlic clove, grated<\/li>\n<li>\u00bd cup &#8211; \u00be cup cold water<\/li>\n<li>Salt and pepper, to taste<\/li>\n<\/ul>\n<p><strong>Harvest bowl ingredients: <\/strong><\/p>\n<ul>\n<li>8 brussel sprouts, sliced in half<\/li>\n<li>Olive oil<\/li>\n<li>Salt, to taste<\/li>\n<li>2 Tbsp butter<\/li>\n<li>250g white button mushrooms, sliced<\/li>\n<li>1 Tbsp soy sauce<\/li>\n<li>2 cups baby spinach<\/li>\n<li>1 cup cooked wild &amp; brown rice mix<\/li>\n<li>\u00bd cup purple cabbage, shredded<\/li>\n<li>\u00bd cup edamame beans, steamed<\/li>\n<li>\u00bd cup pickled cauliflower \/ cauli blossom<\/li>\n<li>2 Tbsp toasted mixed seeds<\/li>\n<li>Blood orange wedges, to serve<\/li>\n<\/ul>\n<p><strong>Method:<\/strong><\/p>\n<p><strong>For the pickled cauliflower:<\/strong><\/p>\n<ol>\n<li>Put all the ingredients except the cauliflower in a medium sized saucepan.<\/li>\n<li>Mix and bring to the boil.<\/li>\n<li>Place cauliflower in a large heatproof jar. Pour over the hot pickling liquid.<\/li>\n<li>Allow to cool in the jar and then seal and keep in the fridge.<\/li>\n<li>(Pickle can be made up to a week before)<\/li>\n<\/ol>\n<p><strong>For the avocado dressing:<\/strong><\/p>\n<ol>\n<li>Combine all the ingredients in a blender and season lightly.<\/li>\n<li>Blend until creamy, adding extra water if necessary to reach a smooth consistency.<\/li>\n<li>Transfer to a jar and keep in the fridge for serving.<\/li>\n<\/ol>\n<p><strong>To assemble the bowls:<\/strong><\/p>\n<ol>\n<li>Toss the brussel sprouts with some olive oil and salt.<\/li>\n<li>Place in a cast iron pan on medium high heat.<\/li>\n<li>Cook until charred on their cut side and tender. Set aside.<\/li>\n<li>In the same pan add the butter and when sizzling add the mushrooms.<\/li>\n<li>Saut\u00e9 until the mushrooms release their liquid and are golden brown.<\/li>\n<li>Switch off the heat and pour over the soy sauce and toss.<\/li>\n<li>Season with black pepper.<\/li>\n<li>Divide the baby spinach as a base amongst the two bowls.<\/li>\n<li>Working in little pockets divide the rice, purple cabbage, edamame beans, pickled cauliflower, charred brussel sprouts and mushrooms evenly.<\/li>\n<li>Sprinkle everything with the toasted seeds.<\/li>\n<li>Serve with a wedge of blood orange and the avocado dressing on the side.<\/li>\n<\/ol>\n","protected":false},"excerpt":{"rendered":"<p>Valentine&#8217;s Day is often synonymous with indulgent treats, but for those seeking a fresh, healthy twist on romance, this Mushroom Harvest Bowl offers the perfect solution.
