Gather your loved ones, savor the joy of togetherness, and let this Twice Baked Mushroom Souffl\u00e9 set the tone for a delicious holiday season.<\/strong><\/p>\n<h3><b><span lang=\"EN-GB\">Twice Baked Mushroom Souffl\u00e9<span class=\"gmail_default\">\u00a0Recipe<\/span><\/span><\/b><\/h3>\n<div>\n<p>Serves 6<\/p>\n<p><strong>Ingredients:<\/strong><\/p>\n<ul>\n<li>400g baby button \/ Portabellini mushrooms<\/li>\n<li>50g butter, plus extra for greasing<\/li>\n<li>50g flour<\/li>\n<li>300ml milk<\/li>\n<li>75g parmesan, grated<\/li>\n<li>2 tsp Dijon mustard<\/li>\n<li>Pinch ground nutmeg<\/li>\n<li>4 large free-range eggs, separated<\/li>\n<li>250ml cream<\/li>\n<li>50g parmesan cheese, finely grated<\/li>\n<li>6 x high sided souffl\u00e9 ramekins<\/li>\n<li>Leafy green salad, for serving<\/li>\n<\/ul>\n<p><strong>Method:<\/strong><\/p>\n<ol>\n<li>Preheat the oven to 200\u02daC and butter the ramekins generously.<\/li>\n<li>Place the ramekins in a flat, deep roasting dish and set aside.<\/li>\n<li>Heat a drizzle of olive oil in a large frying pan.<\/li>\n<li>Cook the mushrooms until golden brown.<\/li>\n<li>Season lightly and set aside to cool.<\/li>\n<li>Once cool, divide the cooked mushrooms amongst the buttered ramekins.<\/li>\n<li>Melt butter in a medium sized saucepan and scatter over the flour.<\/li>\n<li>Cook the mixture, moving it around the pan with a spatula.<\/li>\n<li>Switch to a whisk and pour in the milk very gradually while constantly whisking to keep the mixture smooth.<\/li>\n<li>Cook over medium high heat until b\u00e9chamel thickens.<\/li>\n<li>Remove from the heat and add the parmesan, Dijon and nutmeg.<\/li>\n<li>Season with salt and pepper, to taste.<\/li>\n<li>Beat in the egg yolks, one at a time, until fully incorporated.<\/li>\n<li>Set aside.<\/li>\n<li>Beat the egg whites until soft peaks form.<\/li>\n<li>Stir one third of the egg whites into the cheese mixture thoroughly.<\/li>\n<li>Very gently fold the remaining two thirds of the egg whites in, keeping as much air in the mixture as possible.<\/li>\n<li>Divide the mixture evenly between the buttered ramekins.<\/li>\n<li>Pour enough boiling water into the tin to come halfway up the sides of the ramekins.<\/li>\n<li>Bake the souffl\u00e9s for 15 minutes until puffed up and lightly golden.<\/li>\n<li>Remove from the oven, and allow to cool.<\/li>\n<li>Switch off the oven.<\/li>\n<li>Run a knife around the edge of each souffl\u00e9 to loosen.<\/li>\n<li>Gently unmold the souffl\u00e9s into a buttered serving dish that can fit all 6.<\/li>\n<li>Turn them out, mushroom side up.<\/li>\n<li>Pour over the cream and finish with the grated parmesan.<\/li>\n<li>Bake for 15 \u2013 20 minutes until puffed up once again and the cream has thickened and caramelised.<\/li>\n<li>Serve straight away with a lightly dressed green salad on the side.<\/li>\n<\/ol>\n<\/div>\n<p><strong>Looking for more mushroom-inspired dishes to add to your holiday repertoire?
