We\u2019ve got just the thing\u2014this irresistible Mixed Mushroom Tart recipe! Easy to make and full of flavor, it\u2019s a delicious way to start adding more plant-based meals to your week. Try it for one day\u2014starting October 4\u2014and you might find yourself hooked! Check out the recipe below and get cooking!<\/p>\n<h3><strong><span style=\"text-decoration: underline;\">Mixed Mushroom Tart<\/span> <\/strong><\/h3>\n<p>(Vegetarian) \/ Serves 4 &#8211; 6<\/p>\n<p><strong>Ingredients:<\/strong><\/p>\n<p>Pastry:<\/p>\n<ul>\n<li>250g flour<\/li>\n<li>1 tsp salt<\/li>\n<li>125g cold butter, cubed<\/li>\n<li>1 egg yolk<\/li>\n<li>\u00b1 2 Tbsp ice cold water<\/li>\n<\/ul>\n<p>Filling:<\/p>\n<ul>\n<li>1 Tbsp olive oil<\/li>\n<li>1 Tbsp butter<\/li>\n<li>2 shallots, finely minced<\/li>\n<li>500g mixed white button and portabellini mushrooms, sliced<\/li>\n<li>1 clove garlic, minced<\/li>\n<li>1 tsp fresh thyme leaves<\/li>\n<li>1 tsp rosemary leaves, roughly chopped<\/li>\n<li>2 large eggs<\/li>\n<li>125g mascarpone<\/li>\n<li>60g cheddar cheese, grated<\/li>\n<li>Salt and pepper, to taste<\/li>\n<\/ul>\n<p><span style=\"text-decoration: underline;\">Special equipment:<\/span><\/p>\n<ul>\n<li>36 x 13 cm fluted, rectangular tart tin<\/li>\n<\/ul>\n<p><strong>Method:<\/strong><\/p>\n<p><span style=\"text-decoration: underline;\">For the pastry:<\/span><\/p>\n<ol>\n<li>Add flour, salt and butter to a food processor.<\/li>\n<li>Pulse until the mixture looks like wet sand.<\/li>\n<li>Add the egg yolk and gradually pulse in the cold water until the dough starts to come together.<\/li>\n<\/ol>\n<p><span style=\"text-decoration: underline;\">Then:\u00a0<\/span><\/p>\n<ol>\n<li>Tip pastry onto a clean work surface and bring together into a rough rectangle.<\/li>\n<li>Wrap well in cling film and chill for 30 minutes.<\/li>\n<li>Preheat oven to 180\u02daC.<\/li>\n<li>Roll out the chilled pastry on a lightly floured work surface.<\/li>\n<li>Line the tart case with the pastry, pressing well into the flutes.<\/li>\n<li>Trim the excess off the edges and prick the base all over with a fork.<\/li>\n<li>Chill again for 10-15 minutes.<\/li>\n<li>Fill the tart shell with baking paper, overlapping the sides and fill with baking beans or uncooked rice.<\/li>\n<li>Bake for 20 minutes, then remove the beans and bake again for 10 minutes until the pastry is crisp.<\/li>\n<li>While the pastry shell is baking, prepare the filling.<\/li>\n<li>Heat the olive oil and butter together in a large frying pan.<\/li>\n<li>Cook the shallots until soft.<\/li>\n<li>Add the mushrooms and cook until golden brown and they have released all their liquid.<\/li>\n<li><em>They will make the tart soggy if watery so don\u2019t rush this step. <\/em><\/li>\n<li>Add the garlic, thyme and rosemary and cook until fragrant.<\/li>\n<li>Season lightly and scrape into a bowl.<\/li>\n<li>In another small bowl whisk together the eggs, mascarpone and cheddar.<\/li>\n<li>Season lightly.<\/li>\n<li>Add egg mixture to the mushroom bowl and mix well.<\/li>\n<li>Scrape filling into blind baked tart shell.<\/li>\n<li>Bake again for 25 minutes until golden brown and cooked through.<\/li>\n<\/ol>\n<p><strong>Allow to rest for a few minutes before slicing and serving with a green side salad.
