This Creamy Cashew Nut &amp; Mushroom Curry recipe is the ideal\u00a0 option for vegans and vegetarians, as well as anyone looking to reduce reliance on meat in their diet.<\/div>\n<\/div>\n<\/div>\n<\/div>\n<\/div>\n<\/div>\n<\/div>\n<\/div>\n<\/div>\n<\/div>\n<\/div>\n<\/div>\n<\/div>\n<\/div>\n<\/div>\n<\/div>\n<\/div>\n<h3><b>Creamy Cashew Nut &amp; Mushroom Curry<\/b><\/h3>\n<p><b><\/b>Serves 4-6<\/p>\n<p><b>Ingredients:<\/b><\/p>\n<ul>\n<li>1 Tbsp ghee<\/li>\n<li>1 medium onion, finely chopped<\/li>\n<li>1 tsp garlic, minced<\/li>\n<li>1 Tbsp ginger, grated<\/li>\n<li>1 tsp curry powder<\/li>\n<li>1 tsp garam masala<\/li>\n<li>\u00bd tsp cayenne pepper<\/li>\n<li>\u00bd tsp turmeric<\/li>\n<li>1 tin chopped tomatoes<\/li>\n<li>\u00bd cup raw cashew nuts<\/li>\n<li>2 Tbsp ghee<\/li>\n<li>400g portabellini or button mushrooms, sliced<\/li>\n<li>2 tsp curry powder<\/li>\n<li>Salt and pepper, to taste<\/li>\n<li>1 cup peas, fresh or frozen<\/li>\n<li>Rice, fresh coriander, toasted cashew nuts and finely sliced red onion<\/li>\n<\/ul>\n<p><b>Method:<\/b><\/p>\n<ol>\n<li>In a large pot over medium heat, fry the onion, garlic and ginger in ghee along with all the spices.<\/li>\n<li>Cook until the spices become fragrant and the onion is tender. Add in the tin of tomatoes and simmer for 5 minutes. Stir through the cashew nuts and remove from the heat.<\/li>\n<li>Add about 1 cup of cold water to the sauce and then carefully transfer to a blender or use a stick blender. Blend until smooth and set aside. Taste for seasoning.<\/li>\n<li>Fry sliced mushrooms in the remaining ghee.<\/li>\n<li>Season with curry powder, salt and pepper.<\/li>\n<li>To the cooked mushrooms add the blended sauce and bring to a simmer.
