He started wrapping his food in tortillas to keep it warm and transported\u00a0it on his small\u00a0 donkey and a little donkey in Mexican is a burrito! So there you go!<\/li>\n<\/ul>\n<h3><b>VEGAN BURRITO BOWL (LETTUCE, HOISIN MUSHROOMS, GRILLED CORN, AVO, LIME WEDGES, BLACK BEANS )<\/b><\/h3>\n<p><b>Serves 4<\/b><\/p>\n<p><span class=\"gmail_default\"><b>Ingredients<\/b><\/span><\/p>\n<ul>\n<li>15ml avocado oil<\/li>\n<li>250g white button mushrooms, thickly sliced<\/li>\n<li>45ml hoisin sauce<\/li>\n<li>400g cooked brown rice<\/li>\n<li>2 baby cos lettuces, leaves separated<\/li>\n<li>2 fresh corns, cooked and grilled<\/li>\n<li>1 red pepper, roasted and sliced<\/li>\n<li>1 avocado, sliced<\/li>\n<li>1 can black beans, drained<\/li>\n<li>45ml olive oil<\/li>\n<li>15ml rice wine vinegar<\/li>\n<li>salt and milled black pepper<\/li>\n<\/ul>\n<p><b>To Serve:<\/b><\/p>\n<ul>\n<li>fresh coriander leaves<\/li>\n<li>lime wedges<\/li>\n<li>gluten free chips or nachos<\/li>\n<\/ul>\n<p><span class=\"gmail_default\"><b>Method<\/b><\/span><\/p>\n<ol>\n<li>Heat the oil in a pan and fry the mushrooms for 3 minutes.<\/li>\n<li>Add the hoisin sauce and cook for 2 minutes.<\/li>\n<li>Arrange the brown rice in the serving bowls and arrange the lettuce leaves on top.<\/li>\n<li>Followed by the grilled mushrooms, corn, peppers, avocado and black beans.<\/li>\n<li>Whisk the olive oil, vinegar and salt and milled black pepper together and drizzle over the salad.<\/li>\n<li>Enjoy!<\/li>\n<\/ol>\n","protected":false},"excerpt":{"rendered":"<p>Yummy Burritos are a great way to combine all of your favorite Mexican flavors into one delicious dish.
