Additionally, eggs and mushrooms boast significant amounts of thiamin, riboflavin, pantothenic acid, and Vitamin B6, making them a nutritional powerhouse.<\/p>\n<p>When it comes to preparing a meal featuring eggs and mushrooms, the possibilities are endless and we&#8217;ve highlighted three delicious recipes below:<\/p>\n<ul>\n<li><a href=\"https:\/\/www.food-blog.co.za\/joburg\/breakfast-samfa-with-soft-boiled-eggs-crispy-kale-hollandaise-recipe\/\"><strong>Breakfast Portabellas with Soft Boiled Eggs, Crispy Kale &amp; Hollandaise<\/strong><\/a><\/li>\n<li><a href=\"https:\/\/www.food-blog.co.za\/joburg\/double-samfa-omelette-recipe\/\"><strong>Double Mushroom Omelette<\/strong><\/a><\/li>\n<li>Portabello Eggs Florentine<\/li>\n<\/ul>\n<h3>Portabello Eggs Florentine Recipe<\/h3>\n<p>Serves 2<\/p>\n<p><strong>Ingredients:<\/strong><\/p>\n<ul>\n<li>4 large portabello mushrooms<\/li>\n<li>2 garlic cloves, crushed into a paste<\/li>\n<li>200g swiss chard, roughly chopped<\/li>\n<li>100g smoked salmon or trout<\/li>\n<\/ul>\n<p>Hollandaise:<\/p>\n<ul>\n<li>2 large egg yolks<\/li>\n<li>1 tsp water<\/li>\n<li>2 tsp freshly squeezed lemon juice, plus more to taste<\/li>\n<li>115g butter<\/li>\n<li>1 pinch of salt<\/li>\n<li>Fresh chives, chopped, for serving<\/li>\n<li>Lemon wedges, for serving<\/li>\n<li>Salt and pepper, to taste<\/li>\n<li>Olive oil, for cooking<\/li>\n<\/ul>\n<p><strong>Method:<\/strong><\/p>\n<ol>\n<li>Preheat the oven to 200\u00b0C.<\/li>\n<li>Place the mushrooms on a baking tray.<\/li>\n<li>Drizzle with olive oil, brush with garlic and season well with salt and pepper.<\/li>\n<li>Bake for \u00b1 10 minutes until tender.<\/li>\n<li>Meanwhile, heat another drizzle of olive oil in a medium-sized pan.<\/li>\n<li>Add the swiss chard and saut\u00e9 just until the chard has wilted.<\/li>\n<\/ol>\n<p>For the poached eggs:<\/p>\n<ol>\n<li>Bring a pot of water to a boil.<\/li>\n<li>Reduce the heat to a gentle simmer.<\/li>\n<li>Crack eggs, one at a time, into separate bowls.<\/li>\n<li>Swirl the water into a gentle vortex.<\/li>\n<li>Gently slip the eggs one by one into the boiling water.<\/li>\n<li>Cook for about 3 minutes each for soft poached eggs.<\/li>\n<li>Using a slotted spoon, scoop the poached eggs out of the water and place on paper towel to drain.<\/li>\n<\/ol>\n<p>For the hollandaise:<\/p>\n<ol>\n<li>Find a jug that snugly fits the head of a stick blender.<\/li>\n<li>Combine the egg yolks, water, lemon juice and a pinch of salt in the bottom of the jug.<\/li>\n<li>Melt butter in a small saucepan over high heat, until bubbling.<\/li>\n<li>Remove from the heat.<\/li>\n<li>Place the head of the stick blender into the bottom of the cup and turn it on.<\/li>\n<li>With the blender constantly going, slowly drizzle the hot butter into the jug.<\/li>\n<li>Continue pouring until you have used all the butter and the sauce is thick and emulsified.<\/li>\n<li>Taste to adjust seasoning.<\/li>\n<\/ol>\n<p>To assemble:<\/p>\n<ol>\n<li>Divide the chard equally on top of the portabello mushrooms.<\/li>\n<li>Follow with the salmon, a squeeze of lemon juice then top each with a poached egg.<\/li>\n<li>Spoon over the hollandaise sauce and sprinkle with chives, salt and pepper.<\/li>\n<\/ol>\n<p><strong>Serve immediately and enjoy!<\/strong><\/p>\n","protected":false},"excerpt":{"rendered":"<p>Eggs and mushrooms, a dynamic duo of nature&#8217;s goodness, come together to create a delectable and nutritious meat-free meal that is not only easy to prepare but also incredibly satisfying.
