Roasted vegetables are another great option, as they&#8217;re easy to prepare and can be seasoned to your taste.<\/p>\n<p><span style=\"text-decoration: underline;\"><strong>With a little creativity and planning, you can create a healthy and delicious Easter lunch that everyone will enjoy.\u00a0<\/strong><\/span><\/p>\n<ul>\n<li><a href=\"https:\/\/www.food-blog.co.za\/joburg\/balsamic-samfa-with-beans-broccoli-ancient-grains-recipe\/\">Balsamic Mushrooms with Beans, Broccoli &amp; Ancient Grains<\/a><\/li>\n<li><a href=\"https:\/\/www.food-blog.co.za\/joburg\/roasted-samfa-asparagus-with-soft-boiled-eggs-and-herb-vinaigrette-recipe\/\">Roasted Mushrooms &amp; Asparagus with Soft Boiled Eggs and Herb Vinaigrette<\/a><\/li>\n<li>Baked Mushroom Brown Rice<\/li>\n<\/ul>\n<h3>Baked Mushroom Brown Rice<\/h3>\n<p>Serves 4<\/p>\n<p><strong>Ingredients:<\/strong><\/p>\n<ul>\n<li>1 Tbsp olive oil<\/li>\n<li>1 onion, diced<\/li>\n<li>1 \u00bd cups long grain brown rice<\/li>\n<li>2 \u00bd cups water, boiled<\/li>\n<li>1 tsp salt<\/li>\n<li>500g mixed cultivated mushrooms, sliced into similar sized big chunks<\/li>\n<li>1 Tbsp olive oil<\/li>\n<li>2 cloves garlic, finely minced<\/li>\n<li>1 Tbsp soy sauce<\/li>\n<li>1 Tbsp balsamic vinegar<\/li>\n<li>1 bunch fresh thyme sprigs<\/li>\n<li>Salt and pepper, to taste<\/li>\n<li>Micro herbs, to serve<\/li>\n<li>Lemon wedges, to serve<\/li>\n<\/ul>\n<p><strong>Method:<\/strong><\/p>\n<ol>\n<li>Preheat oven to 180\u02daC.<\/li>\n<li>Heat the olive oil in a 26cm saucepan with a lid \/ buffet casserole.<\/li>\n<li>Add the onion and cook until soft.<\/li>\n<li>Add the rice and coat in the onion and olive oil.<\/li>\n<li>Pour the boiling water into the dish and sprinkle over the teaspoon of salt.<\/li>\n<li>Stir briefly just to mix and then cover tightly with aluminium foil.<\/li>\n<li>Place the pan lid on top to ensure the seal is tight.<\/li>\n<li>Bake in the oven for 50 minutes.<\/li>\n<li>While the rice is baking combine the mushrooms in a bowl with the olive oil, garlic, soy, balsamic and thyme. Season lightly and mix well.<\/li>\n<li>After 50 minutes, remove the lid and foil from the rice.<\/li>\n<li>Fluff the rice with a fork.<\/li>\n<li>Spoon the mushrooms on top of the rice and turn oven up to 200\u02daC.<\/li>\n<li>Bake mushrooms on top of the\u00a0 rice for 10-15 minutes until mushrooms are tender and juicy.<\/li>\n<li>Zest the lemon over the entire dish and squeeze over some lemon juice.<\/li>\n<li>Top with micro herbs and serve family style in the pan on the table.<\/li>\n<\/ol>\n<p><strong>Serve with lemon wedges on the side and enjoy!<\/strong><\/p>\n<p>&nbsp;<\/p>\n","protected":false},"excerpt":{"rendered":"<p>Easter is a time of celebration and indulgence, but it&#8217;s essential to keep your health goals in mind when planning your holiday menu.
