Incorporating plenty of colorful fruits and vegetables is a great way to add nutrients and flavor to your meal. You can create a beautiful veggie bowl or salad that&#8217;s bursting with color and flavor. Roasted vegetables are another great option, as they&#8217;re easy to prepare and can be seasoned to your taste.<\/p>\n<p><span style=\"text-decoration: underline;\"><strong>With a little creativity and planning, you can create a healthy and delicious Easter lunch that everyone will enjoy.\u00a0<\/strong><\/span><\/p>\n<ul>\n<li><a href=\"https:\/\/www.food-blog.co.za\/joburg\/balsamic-samfa-with-beans-broccoli-ancient-grains-recipe\/\">Balsamic Mushrooms with Beans, Broccoli &amp; Ancient Grains<\/a><\/li>\n<li>Roasted Mushrooms &amp; Asparagus with Soft Boiled Eggs and Herb Vinaigrette<\/li>\n<li><a href=\"https:\/\/www.food-blog.co.za\/joburg\/baked-samfa-brown-rice-recipe\/\">Baked Mushroom Brown Rice<\/a><\/li>\n<\/ul>\n<h3>Roasted Mushrooms &amp; Asparagus with Soft Boiled Eggs and Herb Vinaigrette<\/h3>\n<p>Serves 4<\/p>\n<p><strong>Ingredients:<\/strong><\/p>\n<ul>\n<li>45ml red wine vinegar<\/li>\n<li>30ml fresh lemon juice<\/li>\n<li>45ml olive oil<\/li>\n<li>4 Tbsp fresh soft herbs, chopped (basil, coriander &amp; Italian parsley work well)<\/li>\n<li>1 tsp honey<\/li>\n<li>8 large portobello mushrooms, whole<\/li>\n<li>350g asparagus, ends trimmed<\/li>\n<li>4 XL free-range eggs, room temperature<\/li>\n<li>Watercress, to serve<\/li>\n<li>Salt and pepper, to taste<\/li>\n<\/ul>\n<p><strong>Method:<\/strong><\/p>\n<p>For the vinaigrette:<\/p>\n<ol>\n<li>Mix all the ingredients together in a small bowl.<\/li>\n<li>Season lightly with salt and pepper.<\/li>\n<\/ol>\n<p>For the veg:<\/p>\n<ol>\n<li>Preheat oven to 200\u02daC, fan on.<\/li>\n<li>Place portobellos on a baking tray.<\/li>\n<li>Spoon a little of the vinaigrette onto the mushrooms.<\/li>\n<li>Season with salt and pepper.<\/li>\n<li>Bake for about 10 minutes, depending on size, until tender and juicy.<\/li>\n<li>While the mushrooms are baking, bring a pot of salted water to the boil.<\/li>\n<li>Prepare an ice bath and have it ready next to the stove.<\/li>\n<li>Lower the asparagus into the boiling water.<\/li>\n<li>Cook for about 1 minute, depending on the thickness of the stems.<\/li>\n<li>Using tongs, remove the asparagus and plunge into ice water for a few minutes until cool.<\/li>\n<li>Drain and dry the asparagus on a clean kitchen towel.<\/li>\n<li>Using the same boiling water &#8211; add the 4 eggs gently, stir well to keep yolks in the centre, and set a timer for 6.5 minutes.<\/li>\n<li>Refresh the ice bath if necessary.<\/li>\n<li>When the timer goes off, plunge the eggs immediately into the ice bath and leave them until cool enough to handle easily.<\/li>\n<li>Peel the eggs and set aside until serving.<\/li>\n<\/ol>\n<p>To serve:<\/p>\n<ol>\n<li>Slice the portobellos into halves or quarters.<\/li>\n<li>Plate along with the asparagus.<\/li>\n<li>Slice the eggs in half and dot around the serving platter.
