Incorporating plenty of colorful fruits and vegetables is a great way to add nutrients and flavor to your meal. You can create a beautiful veggie bowl or salad that&#8217;s bursting with color and flavor. Roasted vegetables are another great option, as they&#8217;re easy to prepare and can be seasoned to your taste.<\/p>\n<p><span style=\"text-decoration: underline;\"><strong>With a little creativity and planning, you can create a healthy and delicious Easter lunch that everyone will enjoy.\u00a0<\/strong><\/span><\/p>\n<ul>\n<li>Balsamic Mushrooms with Beans, Broccoli &amp; Ancient Grains<\/li>\n<li><a href=\"https:\/\/www.food-blog.co.za\/joburg\/roasted-samfa-asparagus-with-soft-boiled-eggs-and-herb-vinaigrette-recipe\/\">Roasted Mushrooms &amp; Asparagus with Soft Boiled Eggs and Herb Vinaigrette<\/a><\/li>\n<li><a href=\"https:\/\/www.food-blog.co.za\/joburg\/baked-samfa-brown-rice-recipe\/\">Baked Mushroom Brown Rice<\/a><\/li>\n<\/ul>\n<h3>Balsamic Mushrooms with Beans, Broccoli &amp; Ancient Grains<\/h3>\n<p>Serves 4-6<\/p>\n<p><strong>Ingredients:<\/strong><\/p>\n<ul>\n<li>500g mixed cultivated mushrooms, sliced into similar sizes for even cooking<\/li>\n<li>1 Tbsp olive oil<\/li>\n<li>3 Tbsp balsamic vinegar<\/li>\n<li>1 Tbsp soy sauce<\/li>\n<li>2 cloves garlic, finely minced<\/li>\n<li>\u00bd tsp dried oregano<\/li>\n<li>125g tenderstem broccoli, ends trimmed<\/li>\n<li>150g fine green beans, ends trimmed<\/li>\n<li>Juice and zest of 1 lemon<\/li>\n<li>4 cups cooked ancient grains of choice, warmed<\/li>\n<li><em>(Spelt, barley, black and white quinoa make a lovely mix) <\/em><\/li>\n<li>Salt and pepper, to taste<\/li>\n<li>Micro herbs, for garnish<\/li>\n<\/ul>\n<p><strong>Method:<\/strong><\/p>\n<ol>\n<li>Preheat oven to 200\u02daC, fan on.<\/li>\n<li>Add your mushroom mix to a large mixing bowl.<\/li>\n<li>Drizzle over the olive oil, balsamic vinegar, soy sauce, garlic and oregano.<\/li>\n<li>Season with some black pepper as the soy is salty.<\/li>\n<li>Toss well, coating every piece of mushroom in the seasoning.<\/li>\n<li>Place on a large baking tray, well spaced out.<\/li>\n<li>Roast for \u00b1 7 minutes until just tender and juicy.<\/li>\n<li>When done, keep mushrooms on the roasting tray and keep the mushroom roasting liquid that will have been released while cooking.<\/li>\n<li>This will form a delicious dressing.<\/li>\n<li>While the mushrooms are roasting, bring a pot of salted water to the boil.<\/li>\n<li>Blanch the broccoli and then the green beans until bright green and just cooked through.<\/li>\n<li>Using tongs, drain the veg and place them in a large mixing bowl.<\/li>\n<li>Add the lemon zest and the juice of half the lemon.<\/li>\n<li>Season with salt and pepper.<\/li>\n<li>Mix to dress the beans and broccoli all over.<\/li>\n<\/ol>\n<p>To serve:<\/p>\n<ol>\n<li>Plate the ancient grains on a serving platter.<\/li>\n<li>Dress with the remaining lemon juice.<\/li>\n<li>Top with the roasted mushrooms and blanched green beans and broccoli.<\/li>\n<li>Layer the veggies in a nice visual mix and then drizzle the residual mushroom cooking liquid as a dressing over everything.<\/li>\n<\/ol>\n<p><strong>Garnish with micro herbs and enjoy!<\/strong><\/p>\n<p>&nbsp;<\/p>\n","protected":false},"excerpt":{"rendered":"<p>Easter is a time of celebration and indulgence, but it&#8217;s essential to keep your health goals in mind when planning your holiday menu.
