{"id":12366,"date":"2022-09-13T16:19:01","date_gmt":"2022-09-13T14:19:01","guid":{"rendered":"http:\/\/www.food-blog.co.za\/joburg\/?p=12366"},"modified":"2023-01-05T08:05:19","modified_gmt":"2023-01-05T06:05:19","slug":"samfa-couscous-braai-butternut-recipe","status":"publish","type":"post","link":"https:\/\/www.food-blog.co.za\/joburg\/samfa-couscous-braai-butternut-recipe\/","title":{"rendered":"Mushroom &#038; Couscous Braai Butternut Recipe"},"content":{"rendered":"<p><strong>Everyone&#8217;s ready for summer, the braai, the beach and the sun.<\/strong><\/p>\n<p>Luckily our flavoursome, low calorie and easy to make mushroom braai recipes will also keep your body in tip-top shape for a summer that promises to be the best since 2020.\u00a0Whether you&#8217;re just cutting down a bit on meat or going vegetarian or vegan, we&#8217;ve got you covered!<\/p>\n<ul>\n<li><a href=\"https:\/\/www.food-blog.co.za\/joburg\/braai-samfa-with-chickpea-recipe\/\"><strong>Braai Mushrooms with Chickpea Recipe<\/strong><\/a><\/li>\n<li>Mushroom &amp; Couscous Braai Butternut Recipe<\/li>\n<li><a href=\"https:\/\/www.food-blog.co.za\/joburg\/samfa-steaks-zucchini-chips-garlic-aioli-recipe\/\"><strong>Portabello Steaks, Zucchini Chips &amp; Garlic Aioli Recipe<\/strong><\/a><\/li>\n<\/ul>\n<h3>Mushroom &amp; Couscous Braai Butternut Recipe<\/h3>\n<p><em>Serves 6<\/em><\/p>\n<p><strong>Ingredients:<\/strong><\/p>\n<ul>\n<li>3 medium butternuts<\/li>\n<\/ul>\n<p><span style=\"text-decoration: underline;\">Stuffing:<\/span><\/p>\n<ul>\n<li>1 cup couscous<\/li>\n<li>250ml chicken or vegetable stock, just boiled<\/li>\n<li>200g baby leeks, sliced<\/li>\n<li>300g baby portabellini \/ baby button mushrooms, sliced in half<\/li>\n<li>4 cloves garlic, minced<\/li>\n<li>1 small chilli, sliced and deseeded if desired<\/li>\n<li>100g feta cheese, crumbled<\/li>\n<li>Handful fresh parsley, roughly chopped<\/li>\n<li>3 Tbsp za\u2019atar spice blend<\/li>\n<li>Olive oil, for cooking<\/li>\n<li>Salt and pepper, to taste<\/li>\n<\/ul>\n<p><strong>Method:<\/strong><\/p>\n<ol>\n<li>Preheat braai to medium high heat.<\/li>\n<li>Cut each butternut in half and scoop out the seeds.<\/li>\n<li>Brush the halves with olive oil and season well with salt.<\/li>\n<li>Wrap in tinfoil and place on the braai.<\/li>\n<li>Braai for 30 \u2013 40 minutes, or until cooked through and soft when pierced with a knife.<\/li>\n<li>When the butternut is almost ready, prepare the filling.<\/li>\n<li>Place couscous in a bowl and pour over the stock.<\/li>\n<li>Mix and cover with a lid or tight plastic wrap.<\/li>\n<li>Using a large cast iron pan on the braai or stovetop, heat a drizzle of olive oil.<\/li>\n<li>Add the sliced leeks and cook until tender.<\/li>\n<li>Add the baby button mushrooms and cook until tender.<\/li>\n<li>Add the garlic and chilli and cook until fragrant.<\/li>\n<li>Fluff up the couscous with a fork and add to the pan. Toss to combine.<\/li>\n<li>Remove filling from the heat and mix in the roughly crumbled feta cheese and parsley.<\/li>\n<li>Unwrap butternut halves and fill generously with the mushroom stuffing.<\/li>\n<li>Sprinkle liberally with za\u2019atar and serve straight away!<\/li>\n<\/ol>\n","protected":false},"excerpt":{"rendered":"<p>Everyone&#8217;s ready for summer, the braai, the beach and the sun.
