These friendly fungi are packed with health benefits and are incredibly versatile no matter your skills in the kitchen. We&#8217;ve found a recipe that will not only impress your guests, but is easy to make and light on the budget.<\/p>\n<h3><strong>Baked Mushroom Bowls with Swiss Chard Mash<\/strong><\/h3>\n<p>Serves 4<\/p>\n<p><strong>Ingredients:<\/strong><\/p>\n<p><span style=\"text-decoration: underline;\">For the mash:<\/span><\/p>\n<ul>\n<li>6 large baking potatoes<\/li>\n<li>6 Tbsp butter<\/li>\n<li>125ml \/ \u00bd cup full cream milk, kept warm<\/li>\n<li>1 medium white onion, diced<\/li>\n<li>1 bunch \/ 200g swiss chard, roughly chopped<\/li>\n<\/ul>\n<p><span style=\"text-decoration: underline;\">For the mushrooms:<\/span><\/p>\n<ul>\n<li>500g mixed cultivated mushrooms<\/li>\n<li>2 Tbsp butter, melted<\/li>\n<li>1 Tbsp lemon juice<\/li>\n<li>2 garlic cloves, grated<\/li>\n<li>\u00b1 6 sprigs of fresh thyme<\/li>\n<li>\u00bd tsp chilli flakes<\/li>\n<li>Olive oil<\/li>\n<li>Salt and pepper, to taste<\/li>\n<li>Micro herbs or baby greens, for serving<\/li>\n<\/ul>\n<p><strong>Method:<\/strong><\/p>\n<p><span style=\"text-decoration: underline;\">For the mash:<\/span><\/p>\n<ol>\n<li>Peel potatoes and cut into large cubes.<\/li>\n<li>Transfer to a pot of cold water and rinse until the water runs clear.<\/li>\n<li>Cover potatoes with clean cold water and season generously with salt.<\/li>\n<li>Bring to a simmer.<\/li>\n<li>Cook until potatoes are completely tender.<\/li>\n<li>Drain in a colander and let steam dry for a minute.<\/li>\n<li>Use a potato ricer, food mill or hand held masher to mash the potatoes in their pot.<\/li>\n<li>Add the butter and fold in using a spatula.<\/li>\n<li>Pour in the hot milk and fold it into the potatoes.<\/li>\n<li>Season to taste.<\/li>\n<li>While the potatoes are cooking, prepare the swiss chard.<\/li>\n<li>Heat a drizzle of olive oil in a large frying pan and cook the onion until soft.<\/li>\n<li>Add the swiss chard and saut\u00e9 until barely wilted.<\/li>\n<li>Season.<\/li>\n<li>Fold the swiss chard through the mashed potatoes and keep warm.<\/li>\n<\/ol>\n<p><span style=\"text-decoration: underline;\">For the mushrooms:<\/span><\/p>\n<ol>\n<li>Preheat oven to 200\u02daC, fan on.<\/li>\n<li>Place the mushrooms in a large bowl.<\/li>\n<li><em>It is great to use a mix of mushrooms but keep the sizes similar for cooking.<\/em><\/li>\n<li><em>Keep small portabellinis whole and slice large browns into quarters etc\u2026 <\/em><\/li>\n<li>Drizzle the mushrooms with the melted butter.<\/li>\n<li>Add the lemon juice, garlic, thyme and chilli. Toss to coat well.<\/li>\n<li>Transfer to a large\u00a0 rimmed baking sheet and spread into a single layer.<\/li>\n<li>Roast for 10-15 minutes or until mushrooms release liquid and are golden brown.<\/li>\n<li>Carefully pour off the excess mushroom liquid to keep them from going soggy.<\/li>\n<li><em>(You can keep this for a delicious broth or stock or drizzle over the dish as a sauce)<\/em><\/li>\n<li>Serve the roasted mushrooms on a bed of the swiss chard mash.<\/li>\n<li>Top with some fresh herbs or baby greens and serve!<\/li>\n<\/ol>\n","protected":false},"excerpt":{"rendered":"<p>Mushroom deliciousness for your next meal; and easy on the budget too!
