{"id":11386,"date":"2022-04-11T16:27:17","date_gmt":"2022-04-11T14:27:17","guid":{"rendered":"http:\/\/www.food-blog.co.za\/joburg\/?p=11386"},"modified":"2022-04-28T21:54:24","modified_gmt":"2022-04-28T19:54:24","slug":"ramadan-recipes-spicy-samfa-shakshuka","status":"publish","type":"post","link":"https:\/\/www.food-blog.co.za\/joburg\/ramadan-recipes-spicy-samfa-shakshuka\/","title":{"rendered":"Ramadan Recipes: Spicy Portabello Shakshuka"},"content":{"rendered":"<p><strong>If you&#8217;re looking for light yet filling recipes to start your day as well break your fast during Ramadan, here are a few packed with nutritious mushrooms.<\/strong><\/p>\n<blockquote>\n<p style=\"text-align: center;\">Nourishing and delicious these meal\u00a0ideas will not only help you stay energised they will fill you up without filling you out!<\/p>\n<\/blockquote>\n<p><span style=\"text-decoration: underline;\">Have a look at these two delicious recipes:\u00a0<\/span><\/p>\n<ul>\n<li><a href=\"http:\/\/www.food-blog.co.za\/joburg\/ramadan-recipes-creamy-cashew-nut-samfa-curry\/\"><strong>Creamy Cashew Nut &amp; Mushroom Curry<\/strong><\/a><\/li>\n<li><strong>Spicy Portabello Shakshuka<\/strong><\/li>\n<\/ul>\n<h3><strong>Spicy Portabello Shakshuka Recipe<\/strong><\/h3>\n<p><em>Serves 4<\/em><\/p>\n<p><strong>Ingredients:<\/strong><\/p>\n<ul>\n<li>8-12 medium portabello mushrooms<\/li>\n<li>1 onion, finely chopped<\/li>\n<li>2 stalks celery, finely sliced<\/li>\n<li>2 Tbsp tomato paste<\/li>\n<li>1 Tbsp harissa<\/li>\n<li>4 cloves garlic, minced<\/li>\n<li>1 tsp ground cumin<\/li>\n<li>2 x 400g tins Italian crushed tomatoes<\/li>\n<li>4 large eggs<\/li>\n<li>Handful fresh coriander<\/li>\n<li>Extra virgin olive oil<\/li>\n<li>Salt and pepper, to taste<\/li>\n<li>Crusty bread, for serving<\/li>\n<\/ul>\n<p><strong>Method:<\/strong><\/p>\n<ol>\n<li>Preheat oven to 200\u00b0C and place mushrooms on a rack on top of a baking tray.<\/li>\n<li>Brush with the olive oil and season to taste.<\/li>\n<li>Roast for 10-15 minutes until tender.<\/li>\n<li>In a large heavy based frying pan (or large cast iron pan) add a drizzle of olive oil.<\/li>\n<li>Saut\u00e9 the onion and celery until tender. Add the tomato paste, harissa, garlic and cumin.<\/li>\n<li>Saut\u00e9 until fragrant. Season.<\/li>\n<li>Add the tinned tomatoes and bring to a simmer. Simmer gently until the sauce has thickened slightly, about 10 minutes.<\/li>\n<li>Turn the heat off for a moment and make 4 small wells in the sauce.<\/li>\n<li>Crack an egg into each well. Cover the pan with a lid and switch the heat back on to low.<\/li>\n<li>Cook the eggs for 8 to 10 minutes or until done to your liking.<\/li>\n<li>When the eggs are almost cooked nestle the portabello mushrooms into the sauce to reheat.<\/li>\n<li>Finish with a generous scattering of fresh coriander and serve with crusty bread.<\/li>\n<\/ol>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n","protected":false},"excerpt":{"rendered":"<p>If you&#8217;re looking for light yet filling recipes to start your day as well break your fast during Ramadan, here are a few packed with nutritious mushrooms.
