Done in about 20 minutes, it also doesn&#8217;t take too much of your time which is always a plus in our books. <strong>Try it now!<\/strong><\/p>\n<h3><strong>Oven Roasted Feta &amp; Mushroom Pasta <\/strong><\/h3>\n<p><em>Serves 4<\/em><\/p>\n<p><strong>Ingredients:<\/strong><\/p>\n<ul>\n<li>400g pasta of choice<\/li>\n<li>200g block feta cheese<\/li>\n<li>1 large red onion<\/li>\n<li>500g portabellini mushrooms<\/li>\n<li>\u00b1 6 fresh thyme sprigs<\/li>\n<li>Zest and juice of 1 lemon<\/li>\n<li>Olive oil<\/li>\n<li>Salt and pepper, to taste<\/li>\n<\/ul>\n<p><span style=\"text-decoration: underline;\">To serve:<\/span><\/p>\n<ul>\n<li>Fresh thyme leaves<\/li>\n<li>Parmesan cheese<\/li>\n<\/ul>\n<p><strong>Method:<\/strong><\/p>\n<ol>\n<li>Preheat oven to 200\u02daC fan on.<\/li>\n<li>Slice mushrooms fairly thickly and slice red onion into petals.<\/li>\n<li>Place the block of feta into the centre of a large roasting dish.<\/li>\n<li>Scatter the red onion and mushrooms around the feta.<\/li>\n<li>Tuck the thyme sprigs amongst them.<\/li>\n<li>Season everything well with salt and pepper and drizzle liberally with olive oil.<\/li>\n<li>Toss to coat.<\/li>\n<li>Roast in the oven for \u00b1 20 minutes.<\/li>\n<li>While the mushrooms and feta are roasting, cook the pasta.<\/li>\n<li>Cook in a large pot of salted water until al dente.\u00a0<em>(If you are worried about getting the timing just right and prefer to drain the pasta, reserve 2 cups of pasta water before draining) <\/em><\/li>\n<li>When the mushrooms are ready, remove from the oven and add the lemon zest.<\/li>\n<li>Stir everything together, adding a few splashes of pasta water as you go to create a creamy feta sauce.<\/li>\n<li>Using tongs or a strainer transfer the pasta directly into the baking dish.<\/li>\n<li>Toss to coat in the creamy sauce adding as much pasta water as needed to keep things silky.<\/li>\n<li>Season well with freshly ground black pepper and a good squeeze of lemon juice.<\/li>\n<li>Serve topped with fresh thyme leaves and a sprinkle of Parmesan cheese.<\/li>\n<\/ol>\n","protected":false},"excerpt":{"rendered":"<p>Try out this delicious meal that is as delicious as it is budget-friendly!
