They are also easy to find and prepare, making mealtimes a cinch.<\/p>\n<p>The diverse flavours of mushrooms can expand your palate and reinvigorate your appetite and tastebuds. <span style=\"text-decoration: underline;\"><strong>Visit <a href=\"http:\/\/www.mushroominfo.co.za\">www.mushroominfo.co.za<\/a> for plant-based burgers, pizza, buddha bowls and curries that will literally open up your world.<\/strong><\/span><\/p>\n<ul>\n<li><a href=\"http:\/\/www.food-blog.co.za\/joburg\/samfa-caprese-mushroom-zoodles-recipe\/\"><strong>Caprese Mushroom Zoodles<\/strong><\/a><\/li>\n<li><a href=\"http:\/\/www.food-blog.co.za\/joburg\/samfa-umami-mushroom-rigatoni-recipe\/\"><strong>Umami Mushroom Rigatoni<\/strong><\/a><\/li>\n<li><strong>Curried Mushroom &amp; Kale Quinoa Bowls<\/strong><\/li>\n<\/ul>\n<h3><strong>Curried Mushroom &amp; Kale Quinoa Bowls <\/strong><\/h3>\n<p><em>Serves 4<\/em><\/p>\n<p><strong>Ingredients:<\/strong><\/p>\n<ul>\n<li>2 Tbsp olive oil<\/li>\n<li>1 large red bell pepper, diced<\/li>\n<li>1 red onion, sliced into petals<\/li>\n<li>2 cloves garlic, minced<\/li>\n<li>1 Tbsp fresh ginger, grated<\/li>\n<li>1 tsp hot curry powder<\/li>\n<li>1 tsp garam masala<\/li>\n<li>\u00bd tsp ground turmeric<\/li>\n<li>200g kale, roughly chopped<\/li>\n<li>1 x 400g tin coconut milk<\/li>\n<li>2 Tbsp smooth peanut butter, no sugar added<\/li>\n<li>1 x 400g tin chickpeas, rinsed and drained<\/li>\n<li>400g white button mushrooms, sliced<\/li>\n<li>Juice of 1 large lime<\/li>\n<li>2 cups cooked quinoa, for serving<\/li>\n<li>Lime wedges, for serving<\/li>\n<li>Fresh coriander, for serving<\/li>\n<\/ul>\n<p><strong>Method:<\/strong><\/p>\n<ol>\n<li>Heat oil in a large buffet casserole over medium-high heat.<\/li>\n<li>Add red pepper and onion. Cook briefly until the onion has just softened.<\/li>\n<li>Add garlic, ginger, curry powder, garam masala, turmeric, salt and pepper. Cook until fragrant.<\/li>\n<li>Add the kale and cook until just wilted.<\/li>\n<li>Pour in the coconut milk and add the peanut butter.<\/li>\n<li>Stir and bring to a simmer.<\/li>\n<li>Add the chickpeas and mushrooms. Stir well.<\/li>\n<li>Simmer for a few minutes until the sauce thickens slightly and the mushrooms are cooked but retain some texture and bite.<\/li>\n<li>Remove from the heat and squeeze over fresh lime juice.<\/li>\n<li>Serve in bowls over freshly cooked quinoa with extra lime wedges and plenty of fresh coriander.<\/li>\n<\/ol>\n","protected":false},"excerpt":{"rendered":"<p>There is so much power in the plant kingdom for health and healing.
