{"id":10800,"date":"2021-11-17T15:08:33","date_gmt":"2021-11-17T13:08:33","guid":{"rendered":"http:\/\/www.food-blog.co.za\/joburg\/?p=10800"},"modified":"2021-11-17T15:11:48","modified_gmt":"2021-11-17T13:11:48","slug":"savoury-samfa-loaded-crepes-recipe","status":"publish","type":"post","link":"https:\/\/www.food-blog.co.za\/joburg\/savoury-samfa-loaded-crepes-recipe\/","title":{"rendered":"Savoury Mushroom Loaded Cr\u00eapes Recipe"},"content":{"rendered":"<p><strong>Are you cooking up a storm this festive season?<\/strong><\/p>\n<p>With Christmas and NYE just around the corner, I am sure you will also have lots of family around as the festive season always brings everyone together enjoying a glass of wine, while having conversation over great food.<\/p>\n<p>Cook up something different and exciting this year with these fantastic recipes provided by the South African Mushroom Farmer\u2019s Association that not only pairs fantastically with a glass of bubbly, wine or a local gin, it\u2019s also something new that everyone in the family will love.<\/p>\n<ul>\n<li><a href=\"http:\/\/www.food-blog.co.za\/joburg\/festive-samfa-wellington-cranberry-sauce-recipe\/\"><strong>Festive Mushroom Wellington &amp; Cranberry Sauce<\/strong><\/a><\/li>\n<li><a href=\"http:\/\/www.food-blog.co.za\/joburg\/baby-button-stuffed-red-peppers-with-wild-rice-dried-cranberries-toasted-pecans-recipe-samfa\/\"><strong>Baby Button Stuffed Red Peppers with Wild Rice, Dried Cranberries &amp; Toasted Pecans<\/strong><\/a><\/li>\n<li>Savoury Mushroom Loaded Cr\u00eapes<\/li>\n<\/ul>\n<h3>Savoury Mushroom Loaded Cr\u00eapes<\/h3>\n<p>Serves 4<\/p>\n<p><strong>Ingredients:<\/strong><\/p>\n<p><span style=\"text-decoration: underline;\">For the cr\u00eape batter:<\/span><\/p>\n<ul>\n<li>1 XL egg<\/li>\n<li>150ml milk<\/li>\n<li>70g flour<\/li>\n<li>2 tsp butter, melted<\/li>\n<li>Pinch sea salt<\/li>\n<li>Pinch ground nutmeg<\/li>\n<li>1 Tbsp chives, finely chopped<\/li>\n<\/ul>\n<p><span style=\"text-decoration: underline;\">For the mushrooms:<\/span><\/p>\n<ul>\n<li>4 large Portabella mushrooms, cut into thick slices<\/li>\n<li>1 clove garlic, smashed<\/li>\n<li>1 Tbsp olive oil<\/li>\n<li>1 Tbsp butter<\/li>\n<li>Salt and pepper, to taste<\/li>\n<\/ul>\n<p><span style=\"text-decoration: underline;\">For the eggs:<\/span><\/p>\n<ul>\n<li>4 XL eggs<\/li>\n<li>1 Tbsp butter<\/li>\n<li>\u00bc cup parmesan cheese, grated<\/li>\n<li>Neutral oil, for cooking<\/li>\n<li>Salt and pepper to taste<\/li>\n<\/ul>\n<p><strong>Method:<\/strong><\/p>\n<p><span style=\"text-decoration: underline;\">For the cr\u00eape batter:<\/span><\/p>\n<ol>\n<li>In a blender combine all the ingredients except for the chives.<\/li>\n<li>Blend until smooth. Remove from the blender and stir in the chives.<\/li>\n<li>Set aside to rest in the fridge for 20 minutes.<\/li>\n<li>Heat a large nonstick pan over medium heat and add a drizzle of neutral oil.<\/li>\n<li>Wipe it around the pan with paper towel.<\/li>\n<li>Using a cup measure for ease- pour in \u00bc cup of batter and immediately swirl the pan to spread the batter out evenly.<\/li>\n<li>Cook the cr\u00eape until small bubbles appear on the surface, then flip carefully with both hands. Cook the other side until golden brown.<\/li>\n<li>Place cr\u00eapes on a large plate covered with a clean dish cloth.<\/li>\n<li>Repeat the process until all the batter has been used.<\/li>\n<\/ol>\n<p><span style=\"text-decoration: underline;\">For the Mushrooms:<\/span><\/p>\n<ol>\n<li>In a pan over medium-high heat, add the olive oil and butter.<\/li>\n<li>Add the sliced mushrooms and garlic and saut\u00e9 until golden brown. Season to taste.<\/li>\n<li>Discard the clove of garlic.<\/li>\n<\/ol>\n<p><span style=\"text-decoration: underline;\">For the Eggs:<\/span><\/p>\n<ol>\n<li>In a nonstick pan over medium heat fry the eggs in butter sunny side up or to your liking.<\/li>\n<\/ol>\n<p><span style=\"text-decoration: underline;\">To assemble the cr\u00eapes:<\/span><\/p>\n<ol>\n<li>On a plate place the crepe prettiest side down.<\/li>\n<li>Sprinkle the base with parmesan cheese.<\/li>\n<li>Place one egg in the center of the cr\u00eape and spoon over some mushrooms.<\/li>\n<li>Fold each edge of the cr\u00eape over to form a square with the egg still mostly visible in the middle.<\/li>\n<li>Slide into a frying pan to crisp up the bottom and melt the cheese.<\/li>\n<li>Serve fresh out the pan with a lightly dressed rocket salad.<\/li>\n<\/ol>\n<p><em>If you are a novice &#8211; double the recipe for the cr\u00e9pes to be safe. The cr\u00eapes keep well and the extras can be wrapped in cling film and stored in the fridge for 2-3 days.
