And we&#8217;re delighted as we&#8217;re sure you are too!\u00a0<\/strong><\/p>\n<p>We&#8217;re reinventing our homes and our lifestyles and with slightly smaller money pockets our indulgences are smaller, but equally enjoyable and our eyes are focused on healthy (but very delicious eating).<\/p>\n<blockquote>\n<p style=\"text-align: center;\">With Eating In being the new Eating Out, everyone needs that little bit of magic that only mushrooms can bring to everyday meals.<\/p>\n<\/blockquote>\n<p>They&#8217;re umami rich so packed with flavour; they&#8217;re meaty so they can reduce the meat\u00a0bills when added to your favourite meat meals and they&#8217;re low in calories to fill you up without filling you out!<\/p>\n<p><span style=\"text-decoration: underline;\"><strong>You&#8217;ll love the gourmet touch\u00a0that mushrooms add:<\/strong><\/span><\/p>\n<ul>\n<li><strong>Mushroom and Brinjal canneloni<\/strong><\/li>\n<li><a href=\"http:\/\/www.food-blog.co.za\/joburg\/samfa-ceviche-recipe\/\"><strong>Mushroom C<\/strong><strong>eviche<\/strong><\/a><\/li>\n<li><a href=\"http:\/\/www.food-blog.co.za\/joburg\/samfa-dutch-baby-with-aged-cheddar-parmesan-fresh-rocket\/\"><strong>Mushroom Dut<\/strong><strong>ch Baby<\/strong><\/a><\/li>\n<\/ul>\n<h3><strong>MOUSSAKA AND BRINJAL CANNELONI (BUTTON)<\/strong><\/h3>\n<p><strong>Serves 4 &#8211; 6 <\/strong><\/p>\n<p><strong>Brinjal rolls:<\/strong><\/p>\n<ul>\n<li>2 large brinjals<\/li>\n<li>olive oil, for brushing<\/li>\n<\/ul>\n<p><strong>Moussaka filling:<\/strong><\/p>\n<ul>\n<li>5ml oil<\/li>\n<li>1 red onion, diced<\/li>\n<li>2 garlic cloves, crushed<\/li>\n<li>200g minced lamb<\/li>\n<li>200g button mushrooms, minced<\/li>\n<li>15ml harissa paste<\/li>\n<li>5ml ground cumin<\/li>\n<li>3ml ground cinnamon<\/li>\n<li>\u00bd jar passata tomato sauce<\/li>\n<li>1 (410g) can brown lentils, drained<\/li>\n<\/ul>\n<p><strong>To assemble:<\/strong><\/p>\n<ul>\n<li>150g fresh ricotta, crumbled<\/li>\n<li>50g thick Greek-style yoghurt<\/li>\n<li>35g Parmesan cheese, grated<\/li>\n<li>\u00bd jar passata tomato sauce<\/li>\n<\/ul>\n<p><strong>Brinjal rolls:<\/strong><\/p>\n<ol>\n<li>Cut the brinjals lengthwise into \u00bd cm thick slices.<\/li>\n<li>Lightly brush both sides of the brinjal with some olive oil.<\/li>\n<li>Heat a griddle pan or braai.<\/li>\n<li>Cook the brinjal slices, in batches, for 2-3 minutes per side.<\/li>\n<li>Transfer to a plate and set aside to cool.<\/li>\n<\/ol>\n<p><strong>Moussaka filling:<\/strong><\/p>\n<ol>\n<li>Heat the oil in a pan and gently fry the onion and garlic for 4 \u2013 5 minutes.<\/li>\n<li>Fry the lamb and mushrooms for 3 \u2013 4 minutes.<\/li>\n<li>Stir in the harissa paste, cumin, cinnamon and tomato sauce.<\/li>\n<li>Simmer for 5 minutes.<\/li>\n<li>Stir in the lentils and set aside to cool.<\/li>\n<\/ol>\n<p><strong>To assemble:<\/strong><\/p>\n<ol>\n<li>Preheat the oven to 160\u00b0C.<\/li>\n<li>Combine the ricotta cheese, yoghurt and half of the Parmesan cheese in a small bowl.<\/li>\n<li>Place a brinjal slice on a work surface and top with a little of the ricotta mixture and a spoonful of the mushroom and lamb mixture.<\/li>\n<li>Roll up to enclose filling. Spread the remaining tomato sauce on the base of an ovenproof dish and place the brinjal roll on top.<\/li>\n<li>Repeat with remaining brinjal slices and place in a single layer in the baking dish.<\/li>\n<li>Sprinkle the remaining Parmesan cheese over the brinjals.<\/li>\n<li>Bake for 15 &#8211; 20 minutes.<\/li>\n<li>Top with fresh herbs, if desired, before serving.<\/li>\n<\/ol>\n<p>&nbsp;<\/p>\n","protected":false},"excerpt":{"rendered":"<p>Around the world the family meal and the homecook (even the domestic goddess!) have made a comeback.
