And we&#8217;re delighted as we&#8217;re sure you are too!\u00a0<\/strong><\/p>\n<p>We&#8217;re reinventing our homes and our lifestyles and with slightly smaller money pockets our indulgences are smaller, but equally enjoyable and our eyes are focused on healthy (but very delicious eating).<\/p>\n<blockquote>\n<p style=\"text-align: center;\">With Eating In being the new Eating Out, everyone needs that little bit of magic that only mushrooms can bring to everyday meals.<\/p>\n<\/blockquote>\n<p>They&#8217;re umami rich so packed with flavour; they&#8217;re meaty so they can reduce the meat\u00a0bills when added to your favourite meat meals and they&#8217;re low in calories to fill you up without filling you out!<\/p>\n<p><span style=\"text-decoration: underline;\"><strong>You&#8217;ll love the gourmet touch\u00a0that mushrooms add:<\/strong><\/span><\/p>\n<ul>\n<li><a href=\"http:\/\/www.food-blog.co.za\/joburg\/samfa-brinjal-canneloni-recipe\/\"><strong>Mushroom and Brinjal canneloni<\/strong><\/a><\/li>\n<li><a href=\"http:\/\/www.food-blog.co.za\/joburg\/samfa-ceviche-recipe\/\"><strong>Mushroom Ceviche<\/strong><\/a><\/li>\n<li><strong>Mushroom Dutch Baby<\/strong><\/li>\n<\/ul>\n<h3><strong>Mushroom Dutch Baby with Aged Cheddar, Parmesan &amp; Fresh Rocket<\/strong><\/h3>\n<p>Serves 4 &#8211; 6<\/p>\n<p><strong>Ingredients: <\/strong><\/p>\n<ul>\n<li>8 large eggs<\/li>\n<li>180ml milk<\/li>\n<li>165g flour<\/li>\n<li>\u00bd tsp sea salt flakes<\/li>\n<li>\u00bd tsp freshly ground black pepper<\/li>\n<li>2 Tbsp parsley, chopped<\/li>\n<li>3 Tbsp chives, chopped<\/li>\n<li>85g butter<\/li>\n<li>30g Parmesan cheese, grated<\/li>\n<li>30g aged cheddar cheese, grated<\/li>\n<li>400g portabellini mushrooms, quartered<\/li>\n<li>1 Tbsp butter<\/li>\n<li>1 small bunch fresh thyme<\/li>\n<li>Olive oil<\/li>\n<li>Wedge of lemon<\/li>\n<li>Salt and pepper, to taste<\/li>\n<li>Fresh rocket, for serving<\/li>\n<\/ul>\n<p><strong>Method: <\/strong><\/p>\n<ol>\n<li>Heat oven to 220\u02daC and place a 30cm cast iron pan in the oven.<\/li>\n<li>In a large bowl whisk eggs and milk together until well combined.<\/li>\n<li>In a small bowl, whisk salt and pepper into flour to distribute evenly.<\/li>\n<li>Whisk dry ingredients into wet ingredients. Add the chopped herbs and mix.<\/li>\n<li><em>Carefully<\/em> remove the hot cast iron pan from the oven and place on a lit burner on medium heat. Add butter and swirl it around the pan until it sizzles, melts, coats the pan completely and begins to smell nutty.<\/li>\n<li>Pour in the egg mixture. Scatter with parmesan and cheddar.<\/li>\n<li>Return the pan to the oven and bake for 25 minutes until very puffed up and golden brown.<\/li>\n<li>While the Dutch baby is cooking- preheat a large frying pan.<\/li>\n<li>Add the butter and a little drizzle of olive oil.<\/li>\n<li>Cook mushrooms on high heat with the sprigs of thyme until golden brown. Season well.<\/li>\n<li>Squeeze over a little fresh lemon juice and remove from the heat.<\/li>\n<li>When the Dutch baby is cooked it will begin to deflate so serve it quickly!<\/li>\n<li>Fill the centre with the golden brown mushrooms, top with rocket and serve!<\/li>\n<\/ol>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-92725\" src=\"http:\/\/www.food-blog.co.za\/wp-content\/uploads\/2021\/08\/Mushroom-Dutch-Baby-with-Aged-Cheddar-Parmesan-Fresh-Rocket-2_Image-Credit-The-South-African-Mushroom-Farmers-Association.jpg\" alt=\"\" width=\"1150\" height=\"1725\" \/><\/p>\n","protected":false},"excerpt":{"rendered":"<p>Around the world the family meal and the homecook (even the domestic goddess!) have made a comeback.
