This makes avo cultivation as old as the invention of the wheel!<\/p><\/blockquote>\n<p>Avos\u2019 ancient Mexican roots also include alleged super powers. The Aztecs, for instance, believed the fruit gave supernatural strength to whoever ate it. The Mayans too believed the avo held mystical powers, calling it the fruit of the gods.<\/p>\n<p><strong>Today avos still have magical powers \u2013 they miraculously transform any dish, taking it from gaudy to glam in seconds!<\/strong><\/p>\n<h3><strong>Nachos Salad Jar <\/strong><strong>\u00a0<\/strong><\/h3>\n<p><a href=\"http:\/\/www.food-blog.co.za\/wp-content\/uploads\/2020\/06\/AvoNachos1.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-83272\" src=\"http:\/\/www.food-blog.co.za\/wp-content\/uploads\/2020\/06\/AvoNachos1.jpg\" alt=\"\" width=\"1150\" height=\"767\" \/><\/a><\/p>\n<p><em>A great work lunch that can be prepared ahead (meat or chicken may be added) <\/em><\/p>\n<p>Makes 2 large jars<\/p>\n<p><span style=\"text-decoration: underline;\"><strong>Ingredients<\/strong><\/span><\/p>\n<table>\n<tbody>\n<tr>\n<td width=\"450\">\n<ul>\n<li>1 large ripe avocado, deseeded<\/li>\n<li>4 tablespoons guacamole<\/li>\n<li>1 cup salsa of choice<\/li>\n<li>1 cup grated carrots<\/li>\n<li>\u00bd can sweetcorn kernels, drained<\/li>\n<li>\u00bd can black beans, drained and rinsed<\/li>\n<li>1 large red pepper, sliced<\/li>\n<li>\u00bd\u00a0 red onion, diced<\/li>\n<\/ul>\n<\/td>\n<td width=\"450\">\n<ul>\n<li>1 cup cherry tomatoes, halved<\/li>\n<li>\u00bd cup cucumber, diced<\/li>\n<li>\u00bd cup fresh coriander roughly chopped<\/li>\n<li>1 clove garlic, crushed<\/li>\n<li>Salt and pepper<\/li>\n<li>1 lime, halved<\/li>\n<li>Nachos chips to serve<\/li>\n<\/ul>\n<\/td>\n<\/tr>\n<\/tbody>\n<\/table>\n<p><strong>Method<\/strong><\/p>\n<ol>\n<li>Place a tablespoon of salsa in the bottom of each jar, and top with guacamole.<\/li>\n<li>Divide the vegetables between the two jars, layering first the carrots, sweetcorn, black beans, red pepper, onion, tomatoes and cucumber.<\/li>\n<li>Roughly chop the avocado, and mix with half the coriander, garlic, salt and pepper.<\/li>\n<li>Place spoonfuls of avocado on the top, and squeeze over the lime juice. Garnish with extra coriander and serve with nachos and extra salsa.<\/li>\n<\/ol>\n<h3><strong>Green Avo Sauce, mega Veggies &amp; Avo on Hard shell taco with charred Pineapple &amp; pickled red Onions\u00a0\u00a0<\/strong><strong>\u00a0<\/strong><\/h3>\n<p><a href=\"http:\/\/www.food-blog.co.za\/wp-content\/uploads\/2020\/06\/AvoTaco1.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-83271\" src=\"http:\/\/www.food-blog.co.za\/wp-content\/uploads\/2020\/06\/AvoTaco1.jpg\" alt=\"\" width=\"1150\" height=\"767\" \/><\/a><\/p>\n<p><strong>Ingredients for the Green Avo Sauce <\/strong><\/p>\n<table>\n<tbody>\n<tr>\n<td width=\"450\">\n<ul>\n<li>1 avocado<\/li>\n<li>1 clove garlic<\/li>\n<li>1 jalape\u00f1o, ribs and seeds removed<\/li>\n<li>1 bunch\/30g\u00a0 fresh coriander<\/li>\n<li>\u00bd bunch\u00a0 fresh parsley<\/li>\n<\/ul>\n<\/td>\n<td width=\"450\">\n<ul>\n<li>\u00bc cup shelled pistachios<\/li>\n<li>\u2153 cup avo oil (or olive oil)<\/li>\n<li>\u2153 cup water<\/li>\n<li>Juice of 1 lime<\/li>\n<li>pinch of sea salt<\/li>\n<\/ul>\n<\/td>\n<\/tr>\n<\/tbody>\n<\/table>\n<p><strong>Method for the Green Avo Sauce<\/strong><\/p>\n<ol>\n<li>Place all ingredients in a food processor and pulse to combine, allow to mix until the desired consistency is reached.<\/li>\n<li>Serve immediately or transfer to a small bowl and cover with a film of plastic wrap, pressing it gently into the top, and refrigerate until ready to use.<\/li>\n<\/ol>\n<p><strong>Ingredients for the Tacos<\/strong><\/p>\n<table>\n<tbody>\n<tr>\n<td width=\"450\">\n<ul>\n<li>1 pineapple, diced and charred on a grill pan<\/li>\n<li>\u00bd English cucumber, diced<\/li>\n<li>20 cherry\u00a0 tomatoes, halved<\/li>\n<li>1 red onion, sliced<\/li>\n<li>Shredded cabbage<\/li>\n<\/ul>\n<\/td>\n<td width=\"450\">\n<ul>\n<li>Grated carrot<\/li>\n<li>Shredded lettuce<\/li>\n<li>12 tortillas, toasted<\/li>\n<li>Lime wedges and fresh coriander to serve<\/li>\n<\/ul>\n<\/td>\n<\/tr>\n<\/tbody>\n<\/table>\n<p><strong>To assemble:<\/strong><\/p>\n<ol>\n<li>Lay out the tortillas and top with the veggies.<\/li>\n<li>Serve drizzled with green avo sauce and garnish with lime wedges and extra coriander.<\/li>\n<\/ol>\n<h3><strong>Vegan Breakfast Tostadas with refried Beans, Mushrooms, Baby Potatoes, Cherry Tomatoes, and Avocado<\/strong><\/h3>\n<p><a href=\"http:\/\/www.food-blog.co.za\/wp-content\/uploads\/2020\/06\/AvoTostada1.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-83270\" src=\"http:\/\/www.food-blog.co.za\/wp-content\/uploads\/2020\/06\/AvoTostada1.jpg\" alt=\"\" width=\"1150\" height=\"767\" \/><\/a><\/p>\n<p><em>Serves 4<\/em><\/p>\n<p><strong>Preparation time<\/strong><\/p>\n<p>40 minutes<\/p>\n<p><strong>Cooking time<\/strong><\/p>\n<p>10 mintues<\/p>\n<p><strong>Ingredients<\/strong><\/p>\n<ul>\n<li>8 Tortillas<\/li>\n<li>2 avocados, ripe<\/li>\n<li>150g refried beans<\/li>\n<li>200g baby button mushrooms, grilled<\/li>\n<li>200g new potatoes, roasted<\/li>\n<li>200g cherry tomatoes, halved<\/li>\n<li>Salsa and coriander to serve<\/li>\n<\/ul>\n<p><strong>Method<\/strong><\/p>\n<ol>\n<li>Preheat the oven to 200\u00b0c and spray two large baking sheets with cooking spray.<\/li>\n<li>Lightly spray both sides of the tortillas with cooking spray and place them in a single layer on the prepared baking sheets. Lightly season them with salt.<\/li>\n<li>Bake for 5 minutes, flip them over and bake for another 5-10 minutes, until the tortillas are crispy like a chip. Alternatively the tortillas can be deep fried in hot oil, although we recommend the healthier option of the oven .<\/li>\n<li>To serve: peel and dice the ripe avocados.
