For the Joburgers, it was during the summer holidays at the coast, for the Durbanites and the Capetonians, it was a Sunday treat. What was it? Beer Battered Fish and Chips.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-75883\" src=\"http:\/\/www.food-blog.co.za\/wp-content\/uploads\/2019\/09\/Windhoek-1.png\" alt=\"\" width=\"950\" height=\"250\" \/><\/p>\n<p>So, for Heritage Month, we decided to see if we could replicate that sunshine\u2019y feeling in our kitchen. And after a bunch of flops, let\u2019s just say that at one point, there was batter everywhere, we got it real good.<\/p>\n<ul>\n<li>We used Hake because it\u2019s affordable and it\u2019s not boney. You can also use Snoek, which is delicious and even more affordable, we just aren\u2019t a fan of all the bones.<\/li>\n<li>Corn starch, don\u2019t forget the cornstarch.<\/li>\n<li>Use self-raising flour for all the puffiness.<\/li>\n<li>Make sure that your Windhoek Beer is cold. The trick is to have cold batter and hot oil. Just be very, very careful, because it does splatter. Voila!<\/li>\n<\/ul>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-5604\" src=\"http:\/\/www.food-blog.co.za\/durban\/wp-content\/uploads\/2019\/09\/Fish-And-Chips2.jpg\" alt=\"\" width=\"1150\" height=\"767\" srcset=\"https:\/\/www.food-blog.co.za\/durban\/wp-content\/uploads\/2019\/09\/Fish-And-Chips2.jpg 1150w, https:\/\/www.food-blog.co.za\/durban\/wp-content\/uploads\/2019\/09\/Fish-And-Chips2-300x200.jpg 300w, https:\/\/www.food-blog.co.za\/durban\/wp-content\/uploads\/2019\/09\/Fish-And-Chips2-768x512.jpg 768w, https:\/\/www.food-blog.co.za\/durban\/wp-content\/uploads\/2019\/09\/Fish-And-Chips2-1024x683.jpg 1024w, https:\/\/www.food-blog.co.za\/durban\/wp-content\/uploads\/2019\/09\/Fish-And-Chips2-561x374.jpg 561w, https:\/\/www.food-blog.co.za\/durban\/wp-content\/uploads\/2019\/09\/Fish-And-Chips2-1122x748.jpg 1122w, https:\/\/www.food-blog.co.za\/durban\/wp-content\/uploads\/2019\/09\/Fish-And-Chips2-364x243.jpg 364w, https:\/\/www.food-blog.co.za\/durban\/wp-content\/uploads\/2019\/09\/Fish-And-Chips2-758x506.jpg 758w, https:\/\/www.food-blog.co.za\/durban\/wp-content\/uploads\/2019\/09\/Fish-And-Chips2-608x406.jpg 608w\" sizes=\"auto, (max-width: 1150px) 100vw, 1150px\" \/><\/p>\n<p><span style=\"text-decoration: underline;\"><strong>Ingredients:<\/strong><\/span><\/p>\n<ul>\n<li>5 pieces of deboned hake fillets<\/li>\n<li>\u00bd cup cornstarch<\/li>\n<li>2 cups self-raising flour<\/li>\n<li>440ml Windhoek Lager<\/li>\n<li>1 tsp Garlic Power<\/li>\n<li>1 tsp Paprika<\/li>\n<li>Salt to taste<\/li>\n<li>Black Pepper to taste<\/li>\n<li>Oil for deep frying<\/li>\n<\/ul>\n<p><span style=\"text-decoration: underline;\"><strong>Method:\u00a0<\/strong><\/span><\/p>\n<ol>\n<li>Make sure your pieces of fish are deboned and roughly the same size.<\/li>\n<li>On a plate, mix your cornstarch, paprika and garlic powder.<\/li>\n<li>To make the batter, gently mix the cold beer, flour, salt and pepper in a bowl. You don\u2019t need to overwork the batter, if there are a few tiny lumps, it\u2019s ok.<\/li>\n<li>Heat up your oil, there must be enough that the fish can float and not touch the bottom.<\/li>\n<li>Coat each piece of fish with the cornstarch mix, this is what will stop the batter from sliding off.<\/li>\n<li>Gently immerse the fish in the cold batter and place in the oil carefully.<\/li>\n<li>Fry until golden! It doesn\u2019t take long. 5 \u2013 8 minutes depending on the thickness of the fish.<\/li>\n<li>Remove fish and place on paper towel to absorb oil.<\/li>\n<\/ol>\n<p>We served this with a fresh green salad, slapchips, and tartare sauce.<\/p>\n<p><span style=\"text-decoration: underline;\">There are more complex recipes, but a simple tartare is so easy to make:<\/span><br \/>\nInto two cups of your favourite mayo, add \u00bd a table spoon of chopped parsley, 1 tablespoon of chopped pickles (and 1 tablespoon of chopped capers if you\u2019re feeling fancy), a squeeze of lemon juice, salt and black pepper to taste.
