Sibaya\u2019s Executive Sous Chef Zakhele Ndlozi has shared three of his favourite Easter recipes to try at home, but first he tells us about his own Easter memories and traditions.<\/li>\n<\/ul>\n<p>Our strongest sense of association is smell, and nothing is more beautifully nostalgic than the aromas we remember from childhood. When Ndlozi thinks of the Easters of his youth the first thing that comes to mind is the smell of warm spices and something baking in the oven, usually a simple apricot coconut cake.<\/p>\n<p>\u201cEaster was never overly fancy growing up, but there was always that comforting smell of home, of something made with care. That\u2019s a feeling I still try to recreate in my cooking today,\u201d he says.<\/p>\n<p>At home with his family, pickled fish is a non-negotiable. \u201cWe always had Cape Malay pickled fish. No matter how refined my cooking becomes, I always make sure there\u2019s something familiar on the table that everyone recognises and enjoys. Easter is about connection, not just presentation.\u201d<\/p>\n<h3><strong>Quick Easter questions and chef\u2019s tips:<\/strong><\/h3>\n<p>Ndlozi squeezed in these quick\u2011fire Easter questions between the rush of two kitchen services. They bring structure, richness, and help create that perfect texture whether you\u2019re baking something light like a souffl\u00e9 or an indulgent lemon meringue pie.<\/li>\n<li><strong>The Kitchen &#8216;No-No&#8217;?<\/strong> Rushing food; good cooking needs patience.<\/li>\n<li><strong>Favourite Flavour Pairing?<\/strong> Sweet and spice, like cinnamon paired with something rich like milk chocolate and a hint of red chilli flakes.<\/li>\n<li><strong>The Secret Base: Real butter or a quality baking margarine?<\/strong> Real butter, always.<\/li>\n<li><strong>Flavour Booster: Pure vanilla bean or a dash of cinnamon?<\/strong> Pure vanilla bean, you can\u2019t compare.<\/li>\n<li><strong>The Texture Test: Soft and gooey or a satisfying crunch?<\/strong> Soft and gooey with a bit of crunch for contrast.<\/li>\n<li><strong>The Golden Rule: Following the recipe exactly or &#8220;measuring with the heart&#8221;?<\/strong> Measure with the heart, but understand the basics first.<\/li>\n<\/ul>\n<p>One of Ndlozi\u2019s favourite dishes so far this year has been taking something very familiar, like a township- to- suburb-inspired Kota and elevating it into a refined plate. \u201cIt represents where I come from and where I\u2019m going as a chef,\u201d he says.<\/p>\n<p>He explains further: \u201cOver the past year, I\u2019ve seen guests become more open to bold flavours and elevated comfort food. There\u2019s a strong interest in familiar dishes, but done with a modern twist, with better ingredients, better technique, and more attention to detail.\u201d<\/p>\n<p>Currently, Ndlozi is exploring flavour layering \u2013 especially combining African influences with modern techniques. \u201cIt\u2019s something I\u2019m excited to bring more of into the Sibaya dining experience in the near future.\u201d<\/p>\n<p>Ndlozi has spent a lot of time mentoring rising stars (like seeing Prudence Ntombela succeed at the Inter-Hotel Challenge). \u201cThe one thing I always tell young chefs is: respect the process. There are no shortcuts in this industry. Learn the basics properly, stay humble, and your time will come. Initiative is the best key; you hold your future in your hands you can\u2019t stay sharp with a blunt knife.\u201d<\/p>\n<p>The kitchen at a big property like Sibaya is high-pressure, and Ndlozi must maintain a culture of creativity and respect within his brigade, especially during the busiest seasons\u2026 like Easter.<\/p>\n<p>\u201cIn a high-pressure environment, consistency and respect are everything. I focus on clear communication, leading by example, and creating a culture where the team feels supported but also accountable,\u201d he says. \u201cWhen people feel valued, they perform better, they are my Sun Stars.\u201d<\/p>\n<p>Conscious dining and sustainable practices are front of mind globally, and Sibaya is striving to look more closely at local sourcing, especially here in KwaZulu-Natal, says Ndlozi. &#8220;Using seasonal produce and working with local suppliers not only improves quality but also supports the community and reduces waste.\u201d<\/p>\n<h3>And now, the recipes to get your mouth watering, where he begins with the \u201csomething sweet\u201d for a change.<\/h3>\n<h3><span style=\"text-decoration: underline;\"><strong>Easter Croissant Bread &amp; Butter Pudding Base<\/strong><\/p>\n<p><strong>Ingredients<\/strong><\/p>\n<ul>\n<li>12 Large croissants (day-old works best), torn or sliced<\/li>\n<li>60g Butter (for browning)<\/li>\n<li>2 Cups milk<\/li>\n<li>1 Cup cream<\/li>\n<li>6 Eggs<\/li>\n<li>\u00bd Cup sugar<\/li>\n<li>1 tsp Vanilla essence<\/li>\n<li>Zest of 1 orange or lemon<\/li>\n<li>A pinch of salt<\/li>\n<li>1 Cup speckled eggs (lightly crushed, plus extra for garnish)<\/li>\n<\/ul>\n<p><strong>Method<\/strong><\/p>\n<ol>\n<li>Melt butter over medium heat until it turns golden brown and nutty.<\/li>\n<li>Set aside to cool slightly.<\/li>\n<li>Prepare the custard by whisking eggs, sugar, vanilla, citrus zest, and salt.<\/li>\n<li>Add milk and cream, then whisk in the browned butter.<\/li>\n<li>Assembly:<\/li>\n<li>Place croissants into a greased individual silicone moulds or a muffin tray.<\/li>\n<li>Sprinkle crushed speckled eggs throughout.<\/li>\n<li>Pour custard over and gently press the croissants down to absorb.<\/li>\n<li>Let it sit for 15\u201320 minutes to soak.<\/li>\n<li>Bake at 170\u00b0C for 25\u201330 minutes, until golden and set.<\/li>\n<li>Let it rest slightly before serving.<\/li>\n<\/ol>\n<p><strong>Cream Cheese Chantilly<\/strong><\/p>\n<p><strong>Ingredients<\/strong><\/p>\n<ul>\n<li>100g Cream cheese (room temperature)<\/li>\n<li>1 Cup cream (cold)<\/li>\n<li>2\u20133 Tbsp icing sugar<\/li>\n<li>1 tsp Vanilla extract<\/li>\n<\/ul>\n<p><strong>Method<\/strong><\/p>\n<ol>\n<li>Beat the cream cheese until smooth.<\/li>\n<li>Add cream, icing sugar, and vanilla.<\/li>\n<li>Whip until light, airy, and pipeable.<\/li>\n<li>Chill until serving.<\/li>\n<\/ol>\n<p><strong>Garnish &amp; Assembly<\/strong><\/p>\n<ol>\n<li>Extra speckled eggs (whole &amp; crushed)<\/li>\n<li>Cut a neat portion of the pudding (using a square cutter or round ring mould).<\/li>\n<li>Pipe rosettes of cream cheese Chantilly.<\/li>\n<li>Garnish with speckled eggs (whole + crushed for texture).<\/li>\n<li>Optional: drizzle with melted dark chocolate.<\/li>\n<\/ol>\n<h3><span style=\"text-decoration: underline;\"><strong>Mini Panko-Crumbed Fish Burgers with Pickled Carrot &amp; Radish and Coriander Yoghurt<\/strong><\/span><\/h3>\n<p>Yield: 3 portions (3 mini burgers)<\/p>\n<p><strong>Mini Fish Fillets<\/strong><\/p>\n<p><strong>Ingredients<\/strong><\/p>\n<ul>\n<li>300g Firm white fish (hake), portioned into 3 small fillets<\/li>\n<li>Salt &amp; pepper to taste<\/li>\n<li>1 tsp Cajun spice (optional for a punch)<\/li>\n<li>\u00bd Cup flour<\/li>\n<li>1 Egg, beaten<\/li>\n<li>1 Cup panko breadcrumbs<\/li>\n<li>Zest of \u00bd lemon<\/li>\n<li>Oil for shallow frying<\/li>\n<\/ul>\n<p><strong>Method<\/strong><\/p>\n<ol>\n<li>Season fish with salt, pepper, and Cajun spice.<\/li>\n<li>Prepare a crumbing station: flour \u2192 egg \u2192 panko (mixed with lemon zest).<\/li>\n<li>Dust fish in flour, dip in egg, then coat in panko.<\/li>\n<li>Heat oil in a pan (medium heat).<\/li>\n<li>Fry fillets for 3\u20134 minutes per side until golden and crispy.<\/li>\n<li>Drain on paper towel and season lightly again if needed.<\/li>\n<\/ol>\n<p><strong>Pickled Carrot &amp; pepper to taste<\/li>\n<li>1 Tbsp Cornflour<\/li>\n<li>250ml Water<\/li>\n<li>Fresh coriander, chopped<\/li>\n<\/ul>\n<p><strong>Method<\/strong><\/p>\n<ol>\n<li>Cut the large lamb pieces into small cubes.<\/li>\n<li>In a bowl, combine all ingredients and mix gently, then set aside for 15 minutes<\/li>\n<li>Heat a pan on medium-high with a little oil.<\/li>\n<li>Cook lamb cubes for 3\u20134 minutes per side until caramelised and cooked through.<\/li>\n<li>Mix the cornflour with water to make a runny mixture.\u00a0 Add to the lamb and cook on low heat for 20 minutes until tender.<\/li>\n<li>Set aside before assembling.<\/li>\n<\/ol>\n<p><strong>Pineapple Salsa <\/strong><\/p>\n<p><strong>Ingredients<\/strong><\/p>\n<ul>\n<li>\u00bd Cup fresh pineapple, small dice<\/li>\n<li>1 tsp chilli, finely chopped (optional)<\/li>\n<li>Juice of \u00bd lime<\/li>\n<li>Pinch of salt<\/li>\n<\/ul>\n<p><strong>Method<\/strong><\/p>\n<ol>\n<li>Combine all ingredients in a bowl.<\/li>\n<li>Taste and balance \u2013 should be sweet, acidic, and slightly spicy.<\/li>\n<li>Chill until serving.<\/li>\n<\/ol>\n<p><strong>Assembly<\/strong><\/p>\n<p><strong>Ingredients<\/strong><\/p>\n<ul>\n<li>3 Mini brioche buns (toasted)<\/li>\n<li>3 Lettuce leaves<\/li>\n<li>6 Tomato slices<\/li>\n<li>6 Onion ring slices<\/li>\n<li>3 Tbsp Mayonnaise<\/li>\n<li>2 Cocktail dill cucumbers<\/li>\n<\/ul>\n<p><strong>Method<\/strong><\/p>\n<ol>\n<li>Spread mayonnaise on the base of each bun.<\/li>\n<li>Add fresh lettuce, tomato, sliced tomato, sliced onion and pickles.<\/li>\n<li>Place the hot lamb mix onto each bun.<\/li>\n<li>Spoon pineapple salsa on top.<\/li>\n<li>Add a touch of fresh herbs.<\/li>\n<li>Close bun and serve immediately.<\/li>\n<\/ol>\n<p><strong>Chef\u2019s Tip:<\/strong><\/p>\n<ul>\n<li>Glaze the lamb patties with a soy-honey reduction for shine and depth.<\/li>\n<\/ul>\n","protected":false},"excerpt":{"rendered":"<p>Two of the biggest holidays on the Christian calendar are Christmas and Easter \u2013 and both are celebrated with feasting.
