{"id":12787,"date":"2025-12-22T11:10:48","date_gmt":"2025-12-22T11:10:48","guid":{"rendered":"http:\/\/www.food-blog.co.za\/durban\/?p=12787"},"modified":"2026-09-06T13:40:27","modified_gmt":"2026-09-06T13:40:27","slug":"wow-your-guests-this-festive-season-with-a-show-stopping-crepe-cake","status":"publish","type":"post","link":"https:\/\/www.food-blog.co.za\/durban\/wow-your-guests-this-festive-season-with-a-show-stopping-crepe-cake\/","title":{"rendered":"Wow your guests this festive season with a show stopping Cr\u00eape Cake"},"content":{"rendered":"<p><strong>The <a href=\"https:\/\/www.food-blog.co.za\/durban\/tag\/umhlanga-restaurant-specials\/\">Sibaya<\/a> kitchen team shares one of their<\/strong><strong> favourite recipes!<\/strong><\/p>\n<blockquote>\n<p style=\"text-align: center;\">So much of the <a href=\"https:\/\/www.food-blog.co.za\/durban\/christmas-menus-durban\/\">holiday season<\/a> revolves around fabulous food, and dishes that embrace the traditional colours of red, gold and green make for stunning centerpieces on your festive table, sure to impress <a href=\"https:\/\/www.food-blog.co.za\/durban\/tag\/year-end-functions-durban-restaurants\/\">your guests<\/a>.<\/p>\n<\/blockquote>\n<p><span style=\"text-decoration: underline;\"><strong>The kitchen team at Sibaya Casino &amp; Entertainment Kingdom have selected this recipe for you to try at home.<\/strong><\/span><\/p>\n<h3><strong>CHRISTMAS CREPE CAKE<\/strong><\/h3>\n<p>INGREDIENTS<\/p>\n<p><strong>White Chocolate Mousse<\/strong><\/p>\n<ul>\n<li>2 Cups white chocolate chips<\/li>\n<li>2 Cups whipping cream<\/li>\n<li>2 Tbsp vanilla essence<\/li>\n<li>2 Tbsp gelatine powder<\/li>\n<li>1\/3 Cup of water<\/li>\n<\/ul>\n<p><strong>Red Cr\u00ea<\/strong><strong>pe Mix<\/strong><\/p>\n<ul>\n<li>3 \u00be Cups milk<\/li>\n<li>5 Large eggs<\/li>\n<li>2 \u00bd Cups flour<\/li>\n<li>1 tsp salt<\/li>\n<li>2 \u00bd\u00a0Tsp vanilla essence<\/li>\n<li>1\/3 Cup melted butter<\/li>\n<li>Few drops red food colouring<\/li>\n<\/ul>\n<p><strong>Topping<\/strong><\/p>\n<ul>\n<li>2 Tbsp castor sugar<\/li>\n<li>1 Tbsp lemon juice<\/li>\n<li>1 Cup fresh black cherries, halved<\/li>\n<li>1 Cup strawberries, quartered<\/li>\n<\/ul>\n<p><strong>Garnish<\/strong><\/p>\n<ul>\n<li>\u00bd Cup fresh black cherries, whole<\/li>\n<\/ul>\n<p><strong>METHOD<\/strong><\/p>\n<p><strong>Red Cr\u00ea<\/strong><strong>pe Mix<\/strong><\/p>\n<p>Combine all ingredients in a blender and blend until smooth.<\/p>\n<p>Add the desired number of drops of food colouring.<\/p>\n<p>Pass the mixture through a sieve\u00a0 to remove any excess lumps.<\/p>\n<p>Using a non-stick pan over medium heat, lightly butter the pan.\u00a0 Using a small ladle,\u00a0 pour the mixture, swirling the pan to cover the surface to form a thin coating.\u00a0 After 2 minutes,\u00a0 turn the cr\u00eape to finish the other side,\u00a0 and place on a cooling rack.\u00a0 Repeat until all the batter is used (approximately 15 cr\u00eapes)<\/p>\n<p><strong>White Chocolate Mousse<\/strong><\/p>\n<p>In a saucepan heat two-thirds of the cream until just scalding. Set aside in a bowl. Add white chocolate chips and pour the heated cream into the chocolate.\u00a0 Stir until smooth, then set aside in the fridge overnight.<\/p>\n<p>In a bowl, add cold water and gelatine powder and allow to bloom. Once set, place over a double boiler with water gently simmering until the gelatine becomes smooth and runny.\u00a0 Add the remaining cream and vanilla essence, then set aside.<\/p>\n<p>Place the chocolate ganache mixture into a mixing bowl fitted with a whisk attachment. Beat until soft peaks form, then add the gelatine mixture. Continue to whip for 1 minute, then transfer to a piping bag.<\/p>\n<p><strong>Topping<\/strong><\/p>\n<p>Cut the fresh whole cherries in half, remove the pits, and place them in a bowl.\u00a0 Add the strawberries.\u00a0 Pour over the lemon juice and sprinkle with the castor sugar, then set aside for 15 minutes.<\/p>\n<p><strong>Assembly<\/strong><\/p>\n<p>Place the first cr\u00eape onto a cake board or a rotating cake stand.\u00a0 Using the piping bag filled with white chocolate mousse, pipe from the centre of the cr\u00eape out to the edges.\u00a0\u00a0 Repeat for all the cr\u00eapes.\u00a0 Use the remaining white chocolate mousse to pipe a decorative design.
