It\u2019s also time for stocking up on avos, because what\u2019s a braai slaai without sun-kissed South African avos?<\/strong><\/span><\/p>\n<ul>\n<li>Spring is all about blossoms, blooms and bright colours. Our Namaqualand daisies are in full bloom as are our jacarandas, which will soon cover the streets in lilac floral carpets. This sets the tone for our meals too: lighter and brighter, and a riot of colours, whether on the stoep, around the pool or right next to the braai!<\/li>\n<\/ul>\n<p><span style=\"text-decoration: underline;\">This spring we\u2019re getting creative with green-skinned and dark-skinned avocados. Both are equally nutritious and can be included as part of a healthy eating plan.<\/span><\/p>\n<p>We\u2019re making a Spring Crudit\u00e9 Salad Platter with an Avo Dip, bringing all the creaminess of buttery avos to life, and a braai salad with a twist \u2013 Baby Marrow and Corn Pasta Salad with Avo Pesto (because basil pesto has hogged the limelight long enough!).<\/p>\n<p>Our local avos plus a braai? Say no more! We couldn\u2019t think of a better way to celebrate spring, our heritage and our love for braais at the same time!<\/p>\n<p>Take your cue from our spring menu or craft your own dazzling dishes to welcome the new season. Just make sure you add an avo or two to amp up that spring colour, flavour and freshness!<\/p>\n<p><strong>For further information and avo recipes, visit <a href=\"http:\/\/www.avocado.co.za\">www.avocado.co.za<\/a> , like us on Facebook <a href=\"https:\/\/www.facebook.com\/iloveavocadoSA\">@iloveavocadoSA<\/a> and follow us on Instagram <a href=\"https:\/\/www.instagram.com\/iloveavossa\/\">@iloveavossa<\/a><\/strong><\/p>\n<h3><strong>Spring Crudit\u00e9 Salad Platter (with Avo Dip)<\/strong><\/h3>\n<p>Serves 6-8 as a side<\/p>\n<p><strong>Preparation time:<\/strong> 25 minutes<\/p>\n<p><strong>Ingredients:<\/strong><\/p>\n<p>FOR THE AVO DIP<\/p>\n<ul>\n<li>1 avocado, sliced + extra<\/li>\n<li>Handful dill + extra<\/li>\n<li>1 garlic clove, crushed<\/li>\n<li>180 ml (\u00be cup) plain yoghurt<\/li>\n<li>Juice of \u00bd lemon<\/li>\n<li>Salt and pepper<\/li>\n<\/ul>\n<p>FOR THE SALAD<\/p>\n<ul>\n<li>\u00bd red bell pepper,\u00a0sliced<\/li>\n<li>\u00bd yellow bell pepper,\u00a0sliced<\/li>\n<li>Handful baby carrots,\u00a0halved<\/li>\n<li>Handful baby corn<\/li>\n<li>\u00bd cucumber, sliced into sticks and rings<\/li>\n<li>Handful long stem broccoli<\/li>\n<li>Handful cauliflower (white and\/or purple)<\/li>\n<li>Handful sugar snap peas<\/li>\n<li>Handful radishes,\u00a0halved<\/li>\n<\/ul>\n<p><strong>Method:<\/strong><\/p>\n<ol>\n<li>For the dip, blitz together all the ingredients until smooth. Season with salt and pepper. Spoon into a dip bowl and place in the centre of a round platter. Garnish with extra avo and dill.<\/li>\n<li>For the salad, arrange all the salad ingredients around the avocado dip.<\/li>\n<\/ol>\n<h3><strong>Baby Marrow and Corn Pasta Salad with Avo Pesto Sauce<\/strong><\/h3>\n<p>Serves 6 as a side<\/p>\n<p><strong>Preparation time:<\/strong> 25 minutes<\/p>\n<p><strong>Cooking time:<\/strong> 30 minutes<\/p>\n<p><strong>Ingredients:<\/strong><\/p>\n<ul>\n<li>2 corn cobs, cut kernels off cobb<\/li>\n<li>Salt and pepper<\/li>\n<li>\u00bd x 500 g packet Farfalle pasta (bows)<\/li>\n<li>Avocado or olive oil<\/li>\n<li>3 medium baby marrows, thinly sliced<\/li>\n<li>60 ml (\u00bc cup) salad dressing<\/li>\n<\/ul>\n<p>FOR THE AVO PESTO SAUCE<\/p>\n<ul>\n<li>2 avocados, sliced<\/li>\n<li>2 handfuls basil + extra<\/li>\n<li>60 ml (\u00bc cup) feta, crumbled + extra<\/li>\n<li>125 ml (\u00bd cup) plain yoghurt<\/li>\n<\/ul>\n<p><strong>Method:<\/strong><\/p>\n<ol>\n<li>Cook the corn in salted boiling water for 10 minutes. Drain. Cook over hot coals or a griddle pan for about 5 minutes or until charred all over. Cool, then slice the kernels off.<\/li>\n<li>Cook the pasta in salted boiling water for 10 minutes until cooked. Drain.<\/li>\n<li>Heat a splash of oil on high and fry the baby marrows for\u00a0 about 3 minutes or until golden brown on both sides. Transfer to a bowl and pour over the salad dressing. Mix through the pasta.<\/li>\n<li>For the pesto sauce, blitz \u00bd of the avocados with the remaining ingredients until smooth. Season with salt and pepper. Mix through the pasta with the corn. Place on a serving platter.<\/li>\n<li>Top with remaining avocado, extra basil and extra feta.<\/li>\n<\/ol>\n<p><strong>Variation:<\/strong><\/p>\n<p>Use penne pasta instead of Farfalle pasta.<\/p>\n","protected":false},"excerpt":{"rendered":"<p>Here comes the sun\u2026Mzansi\u2019s favourite time of the year: spring!
