Mushroom & Pork Lasagne Cups<\/strong><\/span><\/h3>\n

Serves 6 \/ Makes 6 lasagne cups<\/p>\n

Ingredients:<\/strong><\/p>\n

    \n
  • 250g Portabellini or white button mushrooms<\/li>\n
  • 1 onion, finely diced<\/li>\n
  • 2 cloves garlic, minced<\/li>\n
  • 250g pork mince<\/li>\n
  • 1 carrot, grated<\/li>\n
  • 350ml tomato pur\u00e9e<\/li>\n
  • Extra virgin olive oil<\/li>\n
  • Salt and pepper, to taste<\/li>\n
  • 4 Tbsp butter<\/li>\n
  • 4 Tbsp flour<\/li>\n
  • 500ml milk<\/li>\n
  • \u00bd cup cheddar cheese, grated<\/li>\n
  • Salt, to taste<\/li>\n
  • \u00bd cup mozzarella cheese, grated<\/li>\n
  • 12 lasagne sheets<\/li>\n<\/ul>\n

    Method:<\/strong><\/p>\n

      \n
    1. Preheat oven to 180\u02daC.<\/li>\n
    2. Using a food processor, pulse the mushrooms until they are finely chopped.<\/li>\n
    3. In a large pan<\/strong> saut\u00e9 the mushrooms with a little drizzle of olive oil until they have sweated off most of their water, about 10 to 15 min. Set mushrooms aside.<\/li>\n
    4. In the same large frying pan<\/strong> add a fresh drizzle of olive oil.<\/li>\n
    5. Cook the onion until very soft and fragrant. Add the garlic and cook for a minute.<\/li>\n
    6. Add the pork mince and cook until golden brown around the edges.<\/li>\n
    7. Add the carrots and cook until tender.<\/li>\n
    8. Add the\u00a0cooked mushrooms and tomato pur\u00e9e.<\/li>\n
    9. Bring to a simmer and cook for 20 min until the sauce has reduced and thickened.<\/li>\n
    10. Remove from the heat and set aside.<\/li>\n<\/ol>\n

      For the b\u00e9chamel:<\/strong><\/p>\n

        \n
      1. In a large pan melt the butter.<\/li>\n
      2. Once melted add the flour and whisk over medium heat until the mixture smells like biscuits.<\/li>\n
      3. Pour in the milk in a very slow stream whisking constantly.<\/li>\n
      4. Whisk until all the milk has been fully incorporated.<\/li>\n
      5. Bring mixture to a simmer and cook until thick. Season well with salt.<\/li>\n
      6. Remove b\u00e9chamel from the heat and stir in the grated cheese.<\/li>\n
      7. In a large pot of boiling salted water<\/strong>, boil the lasagne sheets according to package instructions.<\/li>\n
      8. Once al dente, remove from water and lay the sheets out individually on a clean kitchen surface.<\/li>\n<\/ol>\n

        To construct the <\/strong>cups<\/strong><\/p>\n

          \n
        1. Brush a muffin tin with a little olive oil.<\/li>\n
        2. Place two cooked lasagne sheets across each other in each muffin cup.<\/li>\n
        3. Trim off most of the excess while leaving some to get crispy in the oven.<\/li>\n
        4. Alternate layers of cheesy b\u00e9chamel and mushroom mixture until the cups are full.<\/li>\n
        5. Top with a little mozzarella.<\/li>\n
        6. Bake for 20-25 minutes until the lasagne cups are bubbling and golden brown.<\/li>\n
        7. Allow to cool slightly before removing from cups and eating right away or packing into your\u00a0lunchbox.<\/li>\n<\/ol>\n","protected":false},"excerpt":{"rendered":"
