The Rhebokskloof Lamb Shank Recipe

Rhebokskloof Wine Estate hosted several Shank & Shiraz dinner evenings recently. For all the chefs out there, they have made their very own Rhebokskloof Lamb Shank recipe available so you can try to replicate the dish at home. Ingredients

  • Braised lamb shank in red wine sauce with a rustic olive mash
  • Ingredients
  • Lamb shank 350g
  • Bread flour 5g
  • Red wine 375ml
  • Vegetable stock 1500ml
  • Salt 2g
  • Fine pepper 2g
  • Oil 20ml
  • Olives 25g
  • Medium onion 1
  • Medium potato 2
  • Button mushrooms 2
  • Baby Carrots 3
  • Cherry tomatoes 2

Method

  1. Heat oil in pan, season and flour the shank
  2. Seal the shank all round, add onion and brown the meat
  3. Add the red wine and stock. Simmer for 2 hours until very tender
  4. Boil the potato until soft then grate the potato.Add olives and season. Fold all ingredients until a mash is created.
  5. Grill the mushrooms and tomato and steam the carrots till tender
  6. Plate the mash first in the center of the plate, place the shank on top.
  7. Place the tomatoes, mushrooms and tomato on the side and drizzle the red wine jus over the shank.
