Seelan’s scrumptious Kingklip Tagliata

It’s a new week and Seelan Restaurant have posted another of their favourite recipes to their Facebook Page. This time they are showcasing their magnificent Kingklip Tagliata and have posted the recipe to all their loyal fans.

The menu at Seelan explores common elements between the cuisines of various cultures, and the fresh, wholesome earthiness of this food really appeals to the chef. He likes to use as many fresh herbs as possible but simplicity is key!

Kingklip Tagliata Recipe by Seelan

Ingredients

  • Two 250g Kingklip or Kob fillets
  • 1 stick of leek (-only the white section – sliced into rings at an angle)
  • 1 red chili (de-seeded and sliced)
  • 2 red spring onions (sliced into rings at an angle)
  • 1 small garlic clove (thinly sliced)
  • 6 mint leaves
  • 6 cherry tomatoes
  • 4 slices/ pieces of sun-dried tomato
  • 70m soy sauce (preferably low in salt)
  • Olive oil
  • A hand-full of rocket and some Parmesan shavings (garnish)

Method

  1. Cut the kingklip fillets into 3 pieces each. (Like fish fingers!)
  2. In a heavy-based pan, add some olive oil.
  3. Grill the fish for four minutes until just cooked.
  4. In a separate pan, add all the ingredients and cook on a low heat for one minute.
  5. Plate the fish either individually or on a serving platter and top with the sauce.
  6. Garnish with rocket, Parmesan and a drizzle of olive oil on top of the fish.
